Starting to plan an all girls trip to Disneyland for Feb 2016, trying to decide if its a better option to go Sunday to Thursday or Monday to Friday, we will hopefully arrive early afternoon so would be able to spend some time in the park on arrival day, no time in park on departure day. Are the parks historically open late on Sundays with all the shows and what not? I know this year when we went in January mid-week there were no fireworks etc.
 
Generally, fireworks, F!, and Diamond Mad T Party are only presented on weekend nights (Fri to Sun) during February (although they do often present them on President's Day Monday). WoC is usually presented nightly. We do not yet know what the schedule will be for PtN. (It's worth noting that this year, 2015, they presented F! nightly in the winter/spring because WoC was undergoing a lengthy refurbishment, but normally, F! is only presented on weekend nights). In terms of operating hours, the parks normally have long hours on weekends (Fri to Sun) and shorter hours on weekdays (again, not including President's Day week). If you're not going into the parks on your departure day, then your best bet to see the nighttime entertainment is the Sun to Thu option, unless you're going during President's Day weekend, then either would work.
 
Sunday thru Thursday sounds better because you'll get to see the new nighttime shows when you are fresh and excited! Sunday is counted as a weekend day in the off season. I believe nightly fireworks are only from Memorial Day Weekend till Labor Day Weekend, potentially ending slightly earlier. World of Color has been nightly unless it has been in refurbishment, I believe. We loved our February visit! Great weather, short lines, some refurbishments, but nothing we couldn't deal with. Have fun planning!
 
Fireworks are presented nightly in the summer (Memorial Day weekend through Labor Day weekend), during Spring Break Season (usually sometime in March and April, depending on when the peak crowds are expected) and during the Holiday Season (usually starting in early/mid-November through early-January). Otherwise, fireworks, F!, and Mad T Party are generally only presented on Fridays, Saturdays, Sundays and on holidays (e.g., President's Day).

I agree with ADLFAN that if you want to see the nighttime entertainment, then you should aim for Sunday to Thursday. Sunday is likely to be the busiest day of your trip, but the trade-off is that you should be able to see the new shows and have lower crowds to deal with the rest of your trip. (It's also worth pointing out that fireworks, and to a lesser extent F!, are weather dependent. So if it's windy (at higher elevations), the fireworks show may be cancelled. Likewise, if it's really raining, F! may be cancelled or modified depending.)
 

Great information since we are going in February, also. We are going Sun-Thurs and plan on the nighttime entertainment that Sunday. Is WOC shown nightly in February??
 
Generally, yes, WoC is presented nightly in February (and for most the year). This year (2015), it underwent a lengthy refurbishment, but that is not common/typical. So, while we won't know for sure what WoC's schedule will be until about 30 to 45-days in advance, it's usually a safe bet to guess that WoC will be presented nightly.
