Summer Crockpot Recipes

I love this thread! I think the CrockPot was the best invention ever :thumbsup2 and I'm always looking for new recipes. if everyone would post their favorite crockpot recipe we would have our own Dis CrockPot Cook Book or No-CookBook. lol That is why I love it so much, for the most part it keeps my kitchen clean.

I have made many, many things in my crockpot, but this has to be my favorite recipe. Although it is only a side dish it is DELISH!

Extra Good Mashed Potatoes

5 lbs potatoes, peeled, cooked and mashed
8 oz pkg cream cheese, softenend
1 1/2 cups sour cream
3 tsp onion powder
1 tsp garlic powder
1 1/2 tsp salt
1/4 tsp pepper
2 tbsp butter, melted

Combine all ingredients. Pour into slow cooker. Cover and cook on low for two hours.

If your family likes cheddar mashed potatoes add 1 1/2 cups of shredded cheddar cheese when combining all of the ingredients.

This is one of my favorites to bring to pot lucks.
 
Italian Beef

4 lbs. chuck/roast beef 2 C. water
2 pkg. Italian dressing mix 1 red pepper
1-2 tsp. soy sauce 4 beef bouillon cubes
1-2 tbs. chopped garlic

Place beef in crock pot. Mix remaining ingredients in with beef. Cook for 7 hours, shredding beef as it softens. Serve with buns or rolls.
 
We do a lot of pork in the crock pot. I do pulled pork every other week - when the boneless pork loin roasts are on sale I stock up. Just put the whole roast in with 1/2 cup of water, then put dry BBQ seasoning on, pepper & bbq sauce. I cook & then shred, then add more BBQ sauce.

Or we love country style pork ribs - cooked the same way, served over white rice.

Do you use the long pork loins that are in the vacuum sealed plastic? The reason I ask, is because my husband purchased one of these, and I have no idea what to do with it. It was about $12, so not cheap. I'd love to try this to get rid of it, since we all like bbq and pork. I was just afraid I wouldn't be able to season this pl enough.

I just made this

Working Man's Roast
1 rump roast
1 can cream of mushroom soup
1 envelope dry onion soup mix
2 t worchester sauce
1/8 t salt and pepper each
1/4 t garlic powder and seasoned salt each

put rump roast in crock pot. Mix all other ingredients and pur over roast.
cook on low for 8-10 hours or until tender.
Slice for sandwiches.
after I take out the roast I add a little cornstarch to make a gravy.

Leftovers our great too.

That's my mom's Sunday Roast recipe ~ it's so good! She cooks it in a big pot in the oven, however once summer comes she should try the crock pot ~ plus it stinks up the house *the onion soup mix I guess* it's a good smell to eat but it gets in your hair, skin, clothes!
 
Garlic Chicken with Rice

1 package (6 ounces) original flavor long grain and wild rice mix

1 small onion, chopped(1/2 cup)

1/2 cup chopped red bell pepper

2 tablespoons olive or vegetable oil

6 cloves garlic, peeled

1 can(14 ounces) chicken broth

3 1/2 pounds bone-in chicken pieces, skin removed

Stir together rice, contents of seasoning packet, onion, bell pepper, oil, garlic, and broth in 3 to 4 quart slow cooker. Arrange chicken on top.


Cover and cook on low heat setting for 5 to 6 hours.


Crockpot Ham with Cheesy Potatoes

1 Bag (28 oz) of frozen diced potatoes with onions & peppers (thawed)
2 cups shreaded cheddar & monterey jack cheese blend (8 oz)
1 can (10-3/4 oz) condensed cream of celery soup
1 container (8 oz) sour cream
3-pound fully cooked smoked boneless ham

1. Spray 5- to 6- qt slow cooker w/cooking spray. Mix frozen potatos, cheese, soup and sour cream in cooker. Cut ham lengthwise in half, place ham on potato mixture.

2. Cover and cook on low heat setting 5 to 6 hours or until potatoes are tender.

3. Remove ham from cooker; place on cutting board. Gently stir potatoes well before serving. Cut ham into slices, serve w/potatoes.


Asian chicken

chicken breasts (I'd say 4-6)
1/2 cup soy sauce (I'd probably go with light soy since the sodium is SO high),
1/2 cup of honey,
2 TBS sesame seeds.

Put the chicken in the crock pot, stir the honey, soy, and seeds together and poor over chicken breasts. Cook on low 4-6 hours.

I recommend doing some broccolli and rice along with it :o)
 
something that my family loves and is really easy


Cheap and I mean Cheap steaks
Put in crockpot
Add some water
beef boilion cubes

cook all day....break up the steak ( it will be falling apart )then I add 2 packages of dry beef gravy and a little flour

cook noodles

the meat falls apart....pour meat and gravy over the noodles.

This sounds great! I was just wondering a few things...
How much water, How many bouillon cubes and how much flour? I can follow a recipe great, but have no natural talent in the kitchen. Thanks for the help!
 
This one has been around a long time with a few variations but we still LOVE it. Empty a jar of salsa into the crock and add boneless chicken breasts. We also add corn, beans or whatever we have around. Cook until the chicken shreads. Before serving add sour cream and shredded lettuce and serve with tortilla chips or in wraps. It's messy but yummy and we always have the few ingredients it calls for in.

I made this yesterday with medium salsa (minus the sour cream) and served with rice and cornbread. It was so simple and so delicious! Thank you so much for this recipe. DH had 4 helpings and took some to work for lunch today. He loved it and wants me to make it again. Definitely going into my meal rotation.

Sorry if somebody already posted, but these are great!

I put a package of boneless chicken breasts in the crock-pot. Pour buffalo chicken sauce (Frank's) over and cook low 6 hours. Shred chicken, continue cooking another hour and then serve over toasted buns. YUMMM.

Adjust the amount of chicken for your size family.

BTW: I didn't have the actual Frank's buffalo sauce but I had a bottle of Frank's Red Hot so I just used the sauce recipe on the back label and doubled the quantities. Don't use the red hot sauce straight-be sure to make/use the pre made or make your own, otherwise you will have the spiciest dinner ever..lol.
 
I'm trying a pork loin bbq recipe right now. I just cut up some onion, and put that on the bottom, put the pork on top, then put more onion on top of the pork. I didn't use a lot of onion, just enough to flavor a bit. I sprinkled some garlic powder on the pork and added some rootbeer to it after poking holes in the pork w/ a fork. It sounds strange, but I found a recipe that everyone swears is delicious. I plan on cooking it on low for 5 hours, then adding bbq sauce for another hour.

The recipe says to use a slow cooker bag because the rootbeer carmelizes, and can create a difficult mess to clean. I am using one for the very first time. I had bought them yrs ago, and they were just sitting in my drawer. I'll let everyone know how it goes.

well today for Memorial day we are crockpotting instead of bbqing...
I have 4 crockpots going...

1)pulled BBq pork
2) meatballs in sauce
3) sausage and peppers

all for sandwiches....

and 4th crockpot going with BBQ beans...

we will be "grilling " hot dogs on George Forman..

I agree, the ribs to tend to be fatty...I just scoop them out (carefully because they fall apart they're so tender!) with a slotted spoon & then lay them on a plate of paper towels to absorb as much grease as I can. I've found the boneless ribs are less greasy, however, they're often not as tender either. The leftover liquid in the crock pot I pour into a glass jar & throw out after cooling - it's way too thick to put down the drain!

Unfortunately our family likes greasy food (bad bad bad I know!) so it doesn't bother us.

You should try straining the grease or even pouring into a good funnel of parchment paper and letting it solidify and then tossing it. The glass bottle is way easier to recycle.
 
Italian Beef Bake

1-2 lbs of Round Steak
1 packet of onion soup mix
1/4 cup of green peppers
1/4 cup of onions
1 8 oz can of tomato sauce
1 14 oz can of diced tomatos
2 Tbsp of Steak Sauce
1 cup of water

Trim fat off of steak and cut into strips. Put all of it in a crockpot and cook on low for at least eight hours. Serve with rice.

I volunteered to make baked beans for a July 4th picnic. I looked online and so many recipes use canned beans. I'd like to make them from scratch with dried beans. I like them sweet and tangy. Does anyone have a recipe they use or could recommend?
