My daughter's soccer team won the state championship last month and to celebrate, the parents of one of her teammates invited the whole team to their beach house for a sleepover and a family cookout the next day (crazy people!!!). The beach house is located on a small island only accessible by ferry. I am supposed to bring an appetizer. Any ideas for something that is good but also very portable? I was originally thinking of chicken wings but I don't know if I'd be able to reheat them easily once over there. What do you think?

brick cream cheese (I prefer light)
chili sauce or cocktail sauce
can of clams, shrimp or crab (or combo)
dump seafood on cream cheese, top w/ sauce, serve w/ crackers
My fav is clams & chili sauce.
Easy, always keep these items in the pantry (Ok, cream cheese in fridge!), and there is never any left!
Have a great time!

I have a wonderful brie/carmalized onions & dried cranberry one, too, but is really best warm!

We always do this one also (except shrimp only for us) and it's always GONE quickly! We also LOVE Mango Shrimp Salsa! Yummy!

Mango Shrimp Salsa

Ingredients:
1 lb. large or medium cooked shrimp
2 roma tomatoes, diced
1 red onion, diced
1 bunch fresh scallions, chopped
1 bunch chopped fresh cilantro
1/2 serrano chili, seeded and minced
1 mango, peeled and diced
1 juice of lime
1/4 cup olive oil
sea salt and fresh ground pepper

Directions:
Cut each shrimp into bite sized pieces and place them in a medium bowl. Add tomatoes, scallions, onion, cilantro, chili, and mango. Add lime juice, olive oil, and toss to mix thoroughly. Season with salt and pepper to taste and serve with tortilla chips.
