My suggestion would be to check menus on the WDW website. There is a Special Diets team that you can contact as well.

For table-service restaurants it is important to note your dietary preferences on the reservation form. In this way you give the food service staff at the restaurant a heads-up regarding your needs and time to prepare something “off-menu” for you. As for the CS eateries, checking with a CM at the counter is your best bet.

I’m not totally sure about the Candy Cauldron, but I’d be surprised if no-sugar options aren’t available. I have seen no-sugar ice cream options at several of the ice cream spots.

Most table service restaurants have no sugar added desserts, but if your goal is to limit sugar for diabetic reasons, these generally aren't good choices. Many of them are carb heavy or have sugar alcohol in place of regular sugar.

I sometimes travel with a friend who is diabetic and she struggles to find sugar free desserts in WDW. Usually the only restaurant offerings (if any) are a sorbet or vanilla ice cream. Seems strange that WDW offers accommodations for gluten-free but overlooks the 12% of the US population with diabetes (as well as those who prefer to cut back on their sugar intake).

“Sugar free” desserts are not typically healthy alternatives for diabetics because they are still high carb. Similarly, gluten-free also tends to be high carb. Basically anything with flour, and the lower-carb flour substitutes don’t bake well for dessert treats. Diabetes isn’t just about cutting out sugar as a sweetener.
