Substitutions for picky eaters at TS meals?

My parents are coming with our family to WDW in December and I've already made all of our ADRs. The kicker is that my mom is extremely picky. Well, she's not really picky...she's just not adventurous at all. In all my life, I've only known her order chicken parm, chopped steak WELL DONE or a mushroom swiss burger in a restaurant. Every now and then there are slight variations. But I could never ever take them to some of our favorites in WDW.

So I have two questions...

1. Which restaurants do you feel are best for safe eaters? I have ADRs at The Wave, Hollywood and Vine, Le Cellier and Tony's Town Square.
2. Has anyone mixed and matched food at a TS resturant? For example, if a dish is "Grilled chicken with white wine sauce and capers", has anyone ever asked for just plain grilled chicken and been easily accomodated?

I think the safest bet for picky eaters are buffets....usually there's something there for everyone to meet everyone's tastes! Add some of these to the plan.
 
My mom is extremely picky and frequently special orders her dishes at the TS restaurants. They will hold sauces, onions, cheese, mushrooms, change salad dressings and substitute side dishes that are listed with an entree with any other side dish you see listed with any other entree. Hope that makes some sense.

In any case, my mom almost never orders her entree exactly the way it is listed on the menu. It has never been a problem even once.
 
My nephew is extremely picky and he's never had a problem finding something to eat. He's got plain pork chops at Brown Derby, plain steak at Yachtsmen, plain pasta at Chefs de france, etc. Your mom will be fine.
 

Here's what my husband does (he's not picky - he just knows what he likes). He orders his meat "naked". Unless it's a sauce he wants to try or likes. If the side dish is something he doesn't like (mashed potatoes), he'll look at the entire menu and see if there is some other side dish on another entree that he does like. He'll substitute that. If he doesn't see anything, he'll ask the server. 99.9% of the times, fries are available even if not listed (if they have a kids menu, they have fries).
