Stupid Question on Dining (paying OOP)

I am from Canada, and will be on dining plan. However, I plan to pay a few Table Service meals OOP (to save credits for signature dining).

I want to know how do they charge in US (specifically WDW). Say I have a party of 4 + one (2-year-old child), lunch @ Garden Grill (according to allearsnet.com, it is $20.99)

So would the bill become $20.99 x 4 + tax (how much?) + gratuity (approx how much)?

I also saw from allearsnet.com, that some restaurant (e.g. Mickey's Backyard BBQ) is $39.99 tax and gratuity included.

In Canada we have to pay 15% tax and 10-15 grautity on top.
 
There is already a 15% gratuity added into the dining plan price. But if you are paying OOP, you add your own gratuity (15% is a good tip). As far as tax, I think it's around 6%, but I could be wrong on that one.
 
Tax on food products at WDW is 6.5% and gratuity is normally between 15 - 20%, deoending on the level of service you recieve. So your price would be 20.99*4*.065*.15 = approx. $102.11

Things like Mickey's BYBBQ, the Luau & Hoop De Doo have tax & gratuity already included in the price you pay for your ticket and nothing further is required from you out of pocket.
