I got a free shank portion of a ham yesterday from the supermarket. It was one of those spend 300 bucks within a period of time and get your choice of a ham, turkey or pan of lasgna.

Anyway, the thing is huge and I'm not planning a big dinner any time soon.
So does ham freeze well? We love ham but like any thing after day 2, no one wants ham leftovers anymore.

TIA

Absolutely. You can definitely freeze it. Make sure that it is airtight though. Also, be sure to date it so that you can use it within the next 8-12 months are so. Congrats on the freebie!

Also - if you are not wanting to save it for a big dinner - do what we do - cook it, have a dinner and then dice up all the extra and freeze it in gallon bags. I then just break off a bunch and use it in...cheesy corn & ham chowder, bean soup, hash, quick eggs benedict, ham & cheese omelettes, potato w/ ham casserole. It can usually get 8-10 meals from the leftovers of one 8 lb ham. It's a great budget meal trick and a lot of them are also quick!

Yes!!! I love having ham in the freezer! Even the parts that might be too tiny to serve as an entree are great in beans & rice/soups. I also make a cheeseball with smoked turkey that would be great with ham, too - for all those little bits leftover, just roll them up in cream cheese and roll in parsley and toasted nuts. YUM!!

You do not want to thaw and refreeze, thaw and refreeze for example every time you want to cut off another night's dinner's worth. Whether or not the bulk shank was precooked.

So you might want to cut it into family sized chunks before freezing it for the first time. Then thaw out just one block each time.

There have been times when I had a big chunk of frozen meat and I needed only a portion of it. I took a saw (yes, a carpenter's hand saw) and cut off what I wanted while it was still frozen. So the rest does not need to be thawed.

I have found that ham freezes well. I have frozen a whole ham-well wrapped. I also regularly freeze sliced ham. We have a meat slicer so I buy a deli ham and slice it up for lunchmeat. I make piles the size of my fridge deli tupperware keeper and wrap them in wax paper. Then, I put them in Ziplock bags. This way, when I need some lunchmeat, I take out just one bundle, put it into my tupperware, and it thaws in the fridge. :)
