Stroller or Baby Carrier?

Take both. BUT DEFINITELY TAKE THE STROLLER.

When I traveled 3 years ago when DS was almost 3 and 5, we rented a double stroller. DS3 disliked stroller at home (and would rarely sit in it) and was still being carried in buckle carriers sometimes at home but for Disney, I knew the heat was going to be too much for both of us to babywear for an extended period of time. He didn't complain about using stroller at all - there is so much to see at Disney, he was happy to sit and just look around.
