Store bought roast chicken ideas?

So DS is back at college and we've been syncing up with Instacart for grocery delivery, which is a godsend. So far the most useful thing he gets is the roast chickens from Wegmans, they are cheaper than buying them from the meat Dept and they are already cooked so less hassle. Thing is he is content with plain chicken and rice but I suspect that will get old fast so I'm looking for ideas for precooked chicken.
 
I use them to make chicken fried rice, chicken tetrazzini, and chicken quesadillas.
 
They're a great base for any number of recipes. I assume he has cooking facilities? (Apartment versus a dorm room)

Some basic ideas:

chicken tacos
chicken with ramen
chicken soup
chicken salad sandwiches
chicken stir-fry
BBQ chicken pizza
chicken and biscuits
chicken Caeser salad

Hopefully, he would throw in some vegetables with these, or have a salad on the side. I actually have a cookbook (bought at Ollie's, a salvage place) that's called "The Rotisserie Chicken cookbook". All the recipes start with a whole roasted chicken (or parts thereof). Try Pinterest--I'm sure there are tons of recipes, without having to hunt down the book.
 

We use them for Buffalo chicken quesadillas my kids can Mae them in their sleep, shredded chicken, shredded cheese, Buffalo sauce, tortillas, in the frying pan.
 
Chicken quesadillas. We are having barbecue chicken quesadillas tonight. Also he can make homemade soup by adding chicken broth and some other cut up veggies and a little pasta.
 
Enchiladas. You need shredded chicken, cheese. corn tortillas, and enchilada sauce (I like the green chili kind). You can roll them to be fancy, or just layer kind of like lasagna.

pretty much everything costco sells premade in their meat department that has chicken is from their rotisserie ones so think about what he might enjoy from there (chix alfredo-just add jarred alfredo and pasta, chick street tacos-shred, season with taco seasoning...),

i use it to make chicken salad (just add celery, crasins, chopped pecans, salt and mayo),

shredded with a little wine and butter on top of pasta,

bbq pulled chicken (shred, add bbq sauce, heat-eat on a bun),

easiest by far (a friend did this for his work lunches for months)-get steamer bags of veggies and mix with chunks of chicken. he would eat by itself or over rice.

Great ideas, the fried rice would be a big win!
Here's the recipe I use for fried rice:
It's easy, and flexible. I add scrambled egg, soy sauce, frozen peas and carrots, ginger, green onion, but really, add anything on hand and fry it up. A box of frozen egg rolls from Aldi in the air fryer to go with it, and its a good sub for takeout Chinese.
 
Toss it in with pasta and jarred pesto or Alfredo sauce. Put it on pizza. plus everything else everyone else said. 😃
 
Are you looking for things that require no effort, no cooking skills, no oven, will add fruits and veg to his diet - all of the above?
 
We simmer the bones for days and make our own chicken stock. We then add udon noodles from kits we buy at Costco along with veggies and extra chicken for a super healthy and delicious meal. Nongshim Udon Noodle Soup kits come with the bowl and seasoning. Just add chicken and water or chicken stock for a great, fast, tasty meal that is as good as Udon soup from a restaurant.

We love Chick Fil A sandwiches, so we put Chick Fil A sauce (available at Chick Fil A and Walmart sells a knockoff that is not as good), add sliced dill pickles then serve on a bun or toasted croissant from Costco.

For a New Mexican easy dish, heat black or pinto beans with cheese and chicken on top in the microwave. Add Costco's 505 hatch green chili, then sour cream if you can't take the heat, avocado, lettuce and onions. We sometimes add a fried egg. Any tomatillo salsa should be good instead of the Costco green chili. This is super easy and very healthy.
 
Tell him to save the carcass when all the meat is gone. He can put it in a freezer bag (label it with the contents and date), then freeze until he's ready to make soup/stock. That way, if he doesn't have time to make soup/stew/etc. right away, he can still save the bones to use later. No waste!
 
I saw a commercial for Arby's Grilled Chicken Pecan salad sandwich and made my own version with grocery store rotisserie chicken. Chicken, grapes, red apple, celery, pecans, mayo. I think they put lettuce on theirs but I didn't.
 
All great ideas. I just copied this entire thread into my recipe notebook.
 
When I buy a rotisserie chicken (usually from Costco) we eat about half of it with just rice and veggies. The other half I will use it in burrito bowls, home-made chicken taquitos, on top of salads, and in soup.
