Disney's are de-barbed and spoiled rotten. Interestingly, they are more velvety than slimy. The excursion on CC is very well done. Don't know if this will get you past the fear, or if you should push it if afraid, but they really are pretty cute and cuddly as undersea creatures go.
I did swiming with the stingrays 10 yrs ago at cosmel and it was drowning with the stingrays frist of all my ife vest did not fit right then I was beyound traiffied of getting stung that I was clinging on to my mom.

I did Castaway Ray's too and had a ball! And this was the week after Steve Irwin died. They are the coolest little things. They swim up on this lattice work "platform" and suck fish out from between your fingers! Then you can get out and swim with them for a bit.

I can tell you that my favorite part of visiting Sea World is visiting and feeding the rays. They feel so funny and I love the way they SLURP squid out of your hands. I could stay there with them all day.
I'm sorry you had a bad experience when you were younger but I guarantee that Disney would not include this in their itinerary if it were dangerous.
If by chance you are referring to stingrays at any other beeches then all you need to do is the stingray shuffle (shuffle your feet in the water instead of walking). They will just swim off. Stepping on them is what will get you in trouble.
I did want to add that we have always seen stingrays at the adult beach on Castaway. Remember that these are not "Disney" stingrays and will still have the barb. As someone else posted, do the stingray shuffle while walking along the shore - the rays become covered with sand and that's why people unknowingly step on them. By shuffling your feet, they will swim away. They are fascinating to watch. Look for what appears to be a shadow in the water - it will many times be a ray.
The ones on CC in the excursion are more like trained pets. They won't hurt you. They just want the snacks they're provided during the excursion. It's a pretty unclimatic event, really. Sounds like you were pretty young last time - now that you're all grown up you'll be fine. The water is very shallow.
We also have seen "wild" ones in the swim lagoon which are not de-barbed. The lagoon is open water...
