I like a Ribeye and I like it Medium rare , I have changed up until a few years ago I liked a medium fillet
Medium rare. I'll have prime rib, NY strip or fillet. I think NY strip has the best flavor, but it isn't always the most tender.
That's why I like them. If a steak is too tender it loses flavor.


I get bacon wrapped filets from a local butcher. Marinate them overnight in a marinade called "buckhead". I grill over charcoal & mesquite
- try to keep the fire as hot as possible without flames shooting up onto the meat. Cook to medium/medium well. And then top with butter that I mix with garlic, paprika, and "Good S---" seasoning. This is our "go to" steak
Also like strip steaks, but prefer the butchers marinade. Had great luck with a Tbone recently. DD7 wanted a steak, so I grabbed one on the way home. Ran the tenderizer through it then gave it the same treatment as the filets. Was delicious![]()

You can't beat a good filet mignon, but lately DBf and I get London Broil. Mainly because I'm liable to eat a pound on my own and it's cheaper.
We always grill it, somewhere between medium-rare and medium. Our marinade changes every time...we like to experiment!

That's the actual name - the other varieties are "Special S---" and "Aw S---". Comes from a company called "Big C---Game Ranch" (they have a picture of a red rooster on their logo). It's something my boss found![]()
