When flying into Orlando would the airport offer a shuttle to the hotel? Also our flight doesn't land until 11 pm so would it be too late? Would we need to uber?

The airport doesn't offer shuttles, but it's possible that hotel does - you'll need to check their website for what amenities are available. However, most resorts do not offer transportation from MCO. Mears taxi runs 24-hours and maybe the Mears shuttle, or Uber/Lyft might be options late at night.
