Where is the best place to stay for 4 adults and a 2 year old? Do we do 2 rooms or one which is better?

This is where to begin:

#1 What are the dynamics of the adults? mom and daughters, sister, friends or is there a male presence? This affects having just ONE bathroom.
#2 What is the temperament of the 2 year old. Can they sleep at the drop of a hat in any environment or do they need dark and quiet. This affects how everyone goes to bed after "goodnight"
 
Art of animation suites - 2 bathrooms no need to fold a stroller (unless you have the monster double strollers or a wide one) for HS and Epcot.
 

We just did 2 adults and an 8 year old at ASMusic and it was OK, but tight. If the Q murphy bed is "down" there is barely any walking space and the chairs aren't useful for sitting as we had to stack them. If the bed is "up" then there are two hard, straight chairs to sit in. Either way, although it was OK sharing with a kid, I'd not have liked it if we were 4 adults.

Choices depend on budget and relationships (gender, friends or family, who is willing to share a bed, etc.) What we actually did was DH, me, and the 8yo in one room and DD/SIL in a connecting room. This gave us more overall space and two bathrooms (and two coffee makers and two fridges), and the little guy was free to "play" between the two rooms. Other "budget" options are ASMu family suites or family suites at AoA (but these are all double beds). Standard rooms at moderate resorts are larger, but not a whole lot. Then you move on to either studios or one or two bedroom suites/villas, either thru Disney directly or by renting DVC points. Either way, cha-ching, on our budget. We stayed at BWV one time in a studio that slept 4- a Q bed and a D sofa bed- and it was tight with 3 of us. The room we stayed in at the Poly last summer said we'd have 2Q beds but we ended up with a Q and a Q sofa-bed. UGH. The space was large enough for 4 adults, but who would get to sleep on the sofa bed (and we paid $400 a night and that was WITH a BounceBack 35% discount). SO... budget and relationships will be the defining factors.

Best is subjective.

The 2 year old doesn't count against room capacity so you could theoretically fit in an AllStar resort room with the toddler in a pack and play. Cheapest but not the best IMO.

Next level, depending on sleeping arrangements is DVC studio. More expensive but you at least get a kitchenette. Bonus: DVC rentals get free washer and dryer use in the laundry room.

You could also get an AllStar Music family suite which will give you 2 bathrooms and a kitchenette plus more space. No free washer or dryer and the pool is less of a wow factor, if that matters.

It goes up from there. Two connecting value rooms. Connecting studios (only at the Poly). One BR villas at any DVC resort.

The actual best option but also the most expensive would be a 2BR villa. 2 adults in the master suite sharing a bed and the other 2 adults in the second bedroom with their own beds. If all 4 adults want their own bed, there's a murphy bed or a sofa bed in the living room. You would have a full kitchen at a deluxe resort plus an in-room washer and dryer so that stuff can be thrown in the wash before you go to bed and into the dryer in the morning while you eat breakfast in the room.

Of course, there's also club level suites. No washer/dryer. No kitchen. But you'd get club level service at a premium price.

Are the adults your grown kids of the same sex? If so, All Star Music would be good with two baths and a separate bedroom.
If not, I’d get two studio rooms or a two bedroom if budget allows.

Yeah this. just depends on your preferences. When we've done this one couple got a studio and the couple with the kid got a 1BR, which is maybe slightly better than a 2BR depending on the resort.
 
I would do 2 rooms, possibly connecting. 5 people in a room, probably with a crib for the little one, would get crowded, fast. Not to mention, if the child needs to go to sleep, what does everyone else do?

I would look carefully at the size of each room, too. I know Beach Club has a daybed for a fifth person--that could possibly work. DVC might be a good choice, too. If you're willing to consider off-site, there are many good choices of villas, condos, and houses. We're a family of 6, and we tend to value space over amenities, but that's a personal choice.
 
It will be me (55) and husband(57) our daughter(29) and our son-in law (30) and our grand baby girl(2)
In that case, separate rooms. One for the parents + toddler and another for the grandparents. If you want to splurge, get a 2BR villa so that you have a full kitchen and a central place to gather when the baby goes down for the night. It also makes it easier if you're going to babysit while the parents have a date night. And a washer/dryer in the villa is so convenient when you have a toddler along.
 
How long are you staying? We did a 3 night stay recently where we rented DVC points and did a studio. It was myself and husband, my parents and our almost 4 year old. We stayed at the GF. We took the Murphy bed, insisted my parents took the real bed and our daughter slept on the pull down under the TV. Any longer and we would have done 2 rooms or a 2 bed.
