I wanted to get a Sunday night in mid October about 3 weeks out last year, there were no DVC rooms anywhere, any size. I stayed at POFQ on points (18, before they started charging the $95 fee).
Oh my goodness. I had no idea! Thanks for the tips! We're realizing now why it might be a good idea to add on in the future! We feel like we're never going to get a place like Beach Club. I guess we have 45 years-sometime in there we should be able to!
It's really not as hard as some people suggest it is - it just depends on when you want to travel and how far in advance you can plan. We've gotten every single reservation we've ever wanted calling on the first day we can at 7 months - with the single exception of HHI in July. I've gotten every single reservation I've wanted in less than 7 months by waitlisting. As of this July, we will have stayed at every single DVC - and while most of those trips have been in June/July - I've also gotten reservations at Easter, Spring Break, F&W and New Years.

I got BCV on my 2nd try(first I had it waitlisted with VWL and we got that instead).
We added on VB, because all the WDW are nice and we don't have a problem staying in any of them. DH wanted a beach front location and I think after one stay, it might be the whole family's favorite resort.
DVC is designed to run at nearly 100% occupancy - with the unoccupied rooms used for maintenance. If there are rooms available short term, its because someone cancelled, or someone isn't using their points.
The question on availablity is "how fast do the rooms book" - its going to be more common to find rooms at SSR or OKW longer than rooms at the smaller resorts. But sometimes even the smaller resorts will have last minute availability.
I think its more common to find one night a few days out (discover you can get there a day early or stay a day late) that find a week six weeks out anywhere.
The resorts typical run at 95% occupancy. September/January are the least busy times. There is always a good chance of last minute availabilty. There are alot of DVC rooms and life will always get in the way of someone's best laid plans. We have canceled a trip ourselves, the day before we were suppose to check-in because of an illness.
3 weeks out from the Sunday of Columbus Day weekend last year had to make a change to our trip because of a death in the family. Wasn't a DVC room to be had on property. And the only two of Disney's hotels with rooms left were Contemporary and GF. Ended up spending one night in the Cont. though I did get an AP rate.
