we did our video of the trip last night tranfering it over, he sat for the entire 4 hours and watched it all, with a straight face just amazed and laughing at parts and excited at others.

so glad we took alot of video for him to enjoy.

I’ve been on vacation for the past two weeks so I’m slowly catching up. I’m glad you enjoyed WCC. We enjoyed our meal there as well. Loved the Smurf shirts as well.

Cooking a good brisket is a art form in these parts. Here’s how I do it.

First, you have to find the right cut of meat. A trimmed brisket is pretty, but it’s not conducive to good BBQ. This cut of meat is by nature, extremely tough. You need the fat and marbling left intact in order to keep the meat from drying out while it slow cooks. I start with an untrimmed brisket in the 10-12 pound range. One side of the brisket will have a layer of fat. Score this several times down the meat, but don’t cut it off.

There are two ways to season a brisket, marinade and dry rub. I say why choose, and do both.

Marinade:
1/4 Cup Soy Sauce
2 Cups BBQ sauce
1 tsp liquid smoke
1tbsp Olive Oil
¼ Cup Worchestershire
3 cups of Dr. Pepper (Do NOT use diet. The sweetner will turn bitter in the marinade!)

Combine, stick in a basting bag with the meat, refrigerate overnight.

Dry Rub:
2 cups of brown sugar
3/4 cup Kosher salt
1/3 cup Chili powder
¼ cup garlic powder
2 tablespoons Cumin

Thoroughly drain marinade. Combine dry rub and generously coat meat. It should be completely covered on all sides. Allow to sit and rest while you go get the smoker ready. (OR stick it back in the fridge for another day.)

To cook this right, you need a smoker. Preferably one that allows you to keep the temp in the 220 range. Smoke time depends GREATLY on the smoker itself and the size of the brisket. 60-70 minutes per pound is a good starting spot.

Smoke it unwrapped FAT SIDE UP. It will have a pink ring around the edges of meat when you slice it. This is normal. The pink doesn’t mean it’s undercooked, it’s just how smoking it works. If you are JUST smoking it, wrap in foil after 4-5 hours to prevent drying.

Or you can do what I do and after 4-5 hours of smoking, move it to the oven to finish. (Wrap in foil, then 220 degrees until the meat reaches an internal temp of 195.)

When I do it ALL in the oven, I usually give it an hour at 350, then drop it to 220 for 8 hours or so depending on the size of the thing.

Which ever way you go, just be sure to let it rest covered and undisturbed for AT LEAST 30-45 min before you slice into it. An hour wouldn’t be bad. Then trim off the fat layer and slice the meat against the grain.

Hi Dan! I finally caught up to you. I'm all caught up and I love the beginnings of your trip. It's great how there are so many opportunities to stop and see nature in FW - the duck, and the Uber Disney fan in the campground! :rotfl2:

Hi Scott, even if you don't want all the craziness, you can let the hostess know, and they'll seat you in that little area off the lobby. We sat there, and DH got the quiet he wanted, and we had the best meal of our whole trip last year!

good thing i just had breakfast or i would need to eat something after reading that...sounds very good and not that hard to make, now i just have to find a decently priced smoker, i have been looking for a little while just dont want something huge but managable that wont get in the way when not using it.

i bet you have a big smoker huh?

thanks scott, they also have 2 quiter areas in the back, one where we were sitting, and then another behind that that over looks more of the pool/lobby area, in the back, both better places if you want out of the noisy middle area.

it is nice still feels like disney but also feels like you are miles away at a private nature area campground.

he is growing up alot, and every time i cut his hair, he looks a few years older, candi hates it.

Chapter 7. Characters with Drums

Our plan as you may remember was after we left Soarin collecting our FP's we were to meet up with the rest of our group (candi, nana, and parker) at character connection. There was hardly anyone in line and they were waiting in the AC, and were 2 people back to see Mickey.

I dont have my photopass of the event yet, but do have pictures we took.

Lets see how Parker did with these characters after seeing them at rope drop and not being to sure of them.

First up was Mickey. looks good high fives all around

checking him out, not bad. smiling at him and not the camera, mickey of course has that affect on little ones.

now we move on to pluto...now parker loves dogs, he plays with our dog all the time,and loves pluto.
but for some reason when he sees pluto in person he gets a little set back.
look buddy its okay, mama plays with his nose.

i dont think so he is saying, but does pretty good in the group one.
just needs to make sure he is on the outside of pluto as far as mama can hold him away.

of course i had to take him to see donald, being his number one man,and parker loves donald as well. in the picture not to sure of him, maybe he thought he was going to eat bread out of our hands like the duck at the trailer that morning.

goofy kind of falls into the dog catagory, parker things he is a dog, so he is a little put off by him as well, the lean away from nana to get away from pluto hold.

next it was on to test track, we got a rider switch pass to use later in the day. me, papa, and nana, went on first, while parker went with candi to the exit to play with the cars...he was in heaven in there.

our wait was pretty fast, maybe 25 minutes to wait and ride.

of course this is a favorite and we love this ride every time.

when we exited, we found parker jumping on the front seat of the SUV and having candi ride in the back, he did not want her up front with him, she had to ride in the back seat...she would jump around and act like it was bumpy road and he thought that was the funniest thing ever.

when we went to exit TT, the skies opened up and it started to pour. out came the CM's putting the poncho desplays up, and people flocked to them...we all looked at each other and said lets give it 15 minutes and see if it clears out. sure enough 10 minutes later all the people who paid 8 bucks for ponchos. were out of the gift shop, and looking up wondering where the rain went, and going about there day thinking that they just blew some money on the FL rain event.

we headed out not missing much in those 10 minutes and made our way over toward nemo and crush.

Lesson Learned(learned this in past trips): if you are going to buy ponchos, buy them ahead of time at home. If you are not going to buy them, or are thinking of buying them, wait 10 minutes to see if the storm passes, most of the storms are over faster than it takes to buy and put on ponchos. unfortantly alot of people dont learn this, and spend alot of money on ponchos in WDW
on the way we start to hear some beats sounding closer and closer to us.

we see the jaminators ( i think that is them) just outside of where you exit the character connection.

they were very good and the sounds echoed nicely under neath the cover with all the concrete.

I love TT! That's got to be one of my favorite rides in all of WDW.

Actually no. It's just a small, normal water smoker. Now my Dad on the ohter hand has one of those smokers you could stuff a cow into. Not that you'd want to, mind you. But you could if need be.

Aw, Parker did well meeting the characters! I have a feeling he will warm up even more throughout the trip!

Parker did pretty good with the characters. Funny that he didn't trust the dog-type characters.

I dont have my photopass of the event yet, but do have pictures we took.

Still waiting to receive them from Disney. When I do, I'll be the bottleneck in the process.
