Squash/zucchini recipes

I dice zucchini and yellow squash and put in a baking dish. Dice a red pepper and add to pan. Make sure it's a fairly large dish as you only want one layer, not a deep pan's worth. Drizzle with EVOO, add salt,pepper and garlic pdr and toss. Bake at 375º until done. Has a nice roasted flavor which I much prefer to the boiled zucchini my DH likes :crazy2:

I am trying to not eat bread stuff and we had sloppy joe's for supper last night so I just put my joe mix over some cooked zucchini. It was pretty good! I've done that with spaghetti sauce before too.
 
This is uses either squash or zuchinni.

6 cups of peeled and cubed squash or zuchinni
4 eggs
1/3 cup of veggie oil
Salt and pepper to taste
1 1/2 cups of bisquick
1 1/2 cups sharp shredded cheddar
1 chopped large onion

mix the veggie, cheese and onion together

combine the other ingredients and mix well.

combine the two mixtures and mix well.
place in a 13x9 sprayed pan and bake one hour and 350.

cut and serve. (I love it cold but could be served warm)
 
A good way to sneak some in. They are so yummy!

Zucchini Brownies
INGREDIENTS (Nutrition)
• 1/2 cup vegetable oil
• 1 1/2 cups white sugar
• 2 teaspoons vanilla extract
• 2 cups all-purpose flour
• 1/2 cup unsweetened cocoa powder
• 1 1/2 teaspoons baking soda
• 1 teaspoon salt
• 2 cups shredded zucchini
• 1/2 cup chopped walnuts
•
• 6 tablespoons unsweetened cocoa powder
• 1/4 cup margarine
• 2 cups confectioners' sugar
• 1/4 cup milk
• 1/2 teaspoon vanilla extract
• DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
2. In a large bowl, mix together the oil, sugar and 2 teaspoons vanilla until well blended. Combine the flour, 1/2 cup cocoa, baking soda and salt; stir into the sugar mixture. Fold in the zucchini and walnuts. Spread evenly into the prepared pan.
3. Bake for 25 to 30 minutes in the preheated oven, until brownies spring back when gently touched. To make the frosting, melt together the 6 tablespoons of cocoa and margarine; set aside to cool. In a medium bowl, blend together the confectioners' sugar, milk and 1/2 teaspoon vanilla. Stir in the cocoa mixture. Spread over cooled brownies before cutting into squares.
 
DH merely tolerated zucchini until this recipe: http://www.marthastewart.com/903070/spice-rubbed-pork-chops-grilled-zucchini . Granted, the main recipe is for pork chops (which, incidentally are also AMAZING), but the grilled zucchini is to die for when combined with the feta. FWIW: I've also made it without the lime zest/wedges and it was still great. Basically, you cut zucchini lengthwise (lets you lay them across the grill for the char marks without it falling through), and toss it with olive oil, salt and pepper. Grill on medium-high until tender, 2-3 minutes each side. Then you sprinkle some lime zest over it, sprinkle with feta and serve with lime wedges.
 

Zucchini Boats

1. Cut zucchini in half and hollow out.
2. Fill with cream cheese
3. cover with marinara or tomato sauce
4. cover w/mozzerella cheese
5. Bake
 
I make zucchini lasagna, using the zucchini in place of where pasta goes... slice the zucchini lengthwise, about 1/4 inch think and use that as the "noodle"... then just layer just like you would normal lasagna... i use mushrooms, ricotta cheese, sometimes ground chuck or sausage and any type of spaghetti/marinara sauce... mozz cheese.:thumbsup2

I dont even know what to call this, but its yummy (main meal):

Saute a pound of ground beef (90/10). - I prefer grass fed.

Add sliced/chucked zucchini (2 medium large or 1 very large).

1 clove garlic

Add diced tomatoes (I use a large can equivalent)

Add the following spices as desired to taste: oregano, basil, bay leaves, salt, pepper.

Saute for 5 min. Sprinkle shredded mozzarella over. Put in baking dish. Bake for 30 min at 350. Serve with pasta.

Its DELISH :) (kind of like a meat sauce with not much tomato).
 
My new favorite, Pineapple Zucchini Bread. Enjoy!

Ingredients
•3 eggs
•2 cups finely shredded zucchini
•1 cup vegetable oil
•1 can (8 ounces) crushed pineapple, drained
•2 teaspoons vanilla extract
•3 cups all-purpose flour
•2 cups sugar
•2 teaspoons baking soda
•1-1/2 teaspoons ground cinnamon
•1 teaspoon salt
•3/4 teaspoon ground nutmeg
•1/2 teaspoon baking powder
•1 cup chopped nuts
•1 cup raisins, optional
Directions
•In a large bowl, combine the eggs, zucchini, oil, pineapple and vanilla. Combine the dry ingredients; stir into egg mixture just until moistened. Fold in nuts and raisins if desired.
•Pour into two greased 8-in. x 4-in. loaf pans. Bake at 350° for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool. Yield: 2 loaves.

Skinnytaste.com has some great healthy recipes using zucchini. I have made the Zucchini Boats (sooo yummy!) and the Zucchini Sticks which are breaded and served with marinara sauce. Yummy!

I just looked at those they look yummy ! I am going to try them but I'm thinking of subbing leftover roasted chicken breast in place of the sausage .

I made the Zucchine Boats - I used turkey hot sausage instead of the chicken sausage - DH and I loved it!!! I used her marinara sauce too - excellent taste and quick to make too.
