Squash/zucchini recipes

I have some and wanted to use it for dinner. What recipes do everybody use fo it? Want to they something new. Thanks in advance.
 
I like to slice them, drizzle with olive oil, salt and pepper and broil until they have caramelized. YUMMY
 

saute with onions and garlic in extra virgin olive oil add fresh tomatoes as well as tomato paste and basil when it is hot and just about to serve add parmesian(sp?) cheese cut in cubes OR any other cheese you prefer.
 
zucchini pizza:
slice zucchini into discs and season with salt, pepper, and oregano and cook at 400 degrees for 15 mins. then add sauce, mozzarella cheese, parm, cheese and any toppings you want and cook for another 10 minutes.

zucchini tots:
grate 1 cup of zucchini, drain, and then roll it in a towel like you would frozen spinach. in a bowl mix 1/2 diced yellow onion, 1/4 cup bread crumbs, 1 egg, salt, pepper, and 1/4 cup cheese (parm or cheddar work best). Add zucchini and mix well. take mini muffin pan, spray with cooking spray, cook at 400 for 12 to 18 minutes. makes 12.

I slice it up into thinnish, rounds. Then cook at a high heat with some EVOO, onions and bell pepper slices. Char them a bit. Then add some cumin, garlic powder, black pepper, and chili powder, plus a squeeze of lime.

Serve in tortillas with cheese, lettuce, black beans, tomatoes, and taco sauce. really good veggie taco!
 
I slice mine, sautee in some butter (doesn't take much but butter tastes much better imo), with garlic and capers.
 
I like fried zucchini but can achieve something similar by cubing the zucchini, saute with olive oil and then sprinkle with breadcrumbs at the end. The breadcrumbs will toast a little bit and stick to the zucchini. Same flavor profile as fried zucchini, far less fat, and less work.
 
For something super-easy in hot weather:

Heat 1 clove mashed garlic with 2-3 Tbsp olive oil in the microwave (30 seconds will do).

Cut squash in half lengthwise and brush the flat sides with the olive oil. Sprinkle with salt & pepper and throw on the grill (flat side down) for 5-10 minutes. If you prefer to cook it more, you can flip it and grill the bottom side too.

If the squash are small I serve whole, or if they are large I cut in large diagonal slices.
 
Turkey Veggie Meatloaf Cups

** I usually make a double batch and freeze the other batch making it easy to have on hand for those last minute dinner idea's.

Ingredients
2 cups coarsely chopped zucchini 1 1/2 cups coarsely chopped onions 1 red bell pepper, coarsely chopped 1 pound extra lean ground turkey 1/2 cup uncooked couscous 1 egg 2 tablespoons Worcestershire sauce 1 tablespoon Dijon mustard 1/2 cup barbecue sauce, or as needed


Directions
Preheat oven to 400 degrees F (200 degrees C). Spray 20 muffin cups with cooking spray.
Place zucchini, onions, and red bell pepper into a food processor, and pulse several times until finely chopped but not liquefied. Place the vegetables into a bowl, and mix in ground turkey, couscous, egg, Worcestershire sauce, and Dijon mustard until thoroughly combined. Fill each prepared muffin cup about 3/4 full. Top each cup with about 1 teaspoon of barbecue sauce.
Bake in the preheated oven until juices run clear, about 25 minutes. Internal temperature of a muffin measured by an instant-read meat thermometer should be at least 160 degrees F (70 degrees C). Let stand 5 minutes before serving.
 
This week I put half a grated zucchini in my taco meat -- keeps the meat moist and nobody even noticed there were veggies.

Also grated zucchini is excellent in cakes.

www.skinnytaste.com constantly. I've noticed she has a lot of zucchinni recipes. I made zucchinni casserole the other night two of my three picky children ate it. I loved it. Check out her site. In fact I think there is another zucchinni recipe on the front page today.
 
We make a giambotta which is a vegetable stew. You can throw any and all vegetables in it. Great way to use up everything in your garden.

I don't have a recipe I follow, but there is one on FoodTV that is similar to how we make it. I don't use the bay leaf or basil.

It's really delicious with a nice crusty loaf of Italian bread to sop up the juices.
 
For a super easy side, I grill em, salt, Italian seasoning,evoo, little crushed red pepper. I also cook them with a can of green pepper, onion diced tomatoes adding above seasoning. You can stuff them using your favorite stuffed pepper recipe, or cook slowly with Italian sausage and fennel seeds,oregano, and salt to taste. I also make poor man's crab cakes - mix 2 cups grated zucchini, little super finely diced red pepper, onion, 1 tablespoon mayo and old bay,1 cup bread crumbs, 2 eggs- form into patties and saute, or you simply make battered fried zucchini sticks. I had a ton of zucchini this year,so I am also looking for new ideas.

Thank you sooo much for posting this recipe! I thought it sounded so good but we didn't have any zucchini at the time. We finally got some and I made it tonight. It was delicious I and so much easier than dipping and frying slices.
 
Skinnytaste.com has some great healthy recipes using zucchini. I have made the Zucchini Boats (sooo yummy!) and the Zucchini Sticks which are breaded and served with marinara sauce. Yummy!

I just looked at those they look yummy ! I am going to try them but I'm thinking of subbing leftover roasted chicken breast in place of the sausage .
