Spring Pantry Challenge

I thought we were having leftover beef and potatoes last night. But, dh surprised me and made Baked Spaghetti. He knows I have been trying to at least one meatless meal per week so he did this without meat. He used up tomatoe sauce, noodels, diced tomaotes and some cheese. So, that was good.

Now, we have leftover beef and potatoes and leftover Baked Spaghetti!

Is the recipe possible. I am doing plain spaghetti tonight and if I can change it up a bit, I am sure the kids will be grateful.
 
Last night I made sweet and sour chicken. Had leftover green/yellow/red/orange bell pepper and red onion pieces when I was done.

So today I made a big batch of pasta salad with half the leftover bell peppers, all the red onion, Italian dressing, seasoning and a box of wheat rotini from the pantry. It'll sit in the fridge over night (I like to give the pasta time to absorb the dressing)

Dinner tonight is a pizza.. pepperoni, sauce, crust, cheese all from the pantry. Using the other half of the leftover bell peppers for toppings and will chop up an onion as well.

tomorrow/thursday... one night will be sloppy joes w/ the pasta salad and steamed broccoli for DH. Other night will be frozen chicken burgers with leftover pasta salad and steamed vegetables for DH. I bought a .69c pack of hamburger bones at the store, all else is from the pantry!
 
Last night's pasta bakw was so good. I took ground beef crumbles and mixed it with the sauce and pasta then topped it with mozzarella cheese. So yummy and gooey.

Today we are headed over to Trader Joe's to do our stock up from there. We go every other month and stock up on our favorites.

Tonight for dinner is roasted turkey (one we got for super cheap at Thanksgiving) with mashed potatoes and corn.
 

DH has been trained to scour the discount meat section at the grocery storey. So, this week he brings home 7 packages of turkey smoked sausage for 99 cents each. 6 packages are in the freezer I am trying to clean out.

Tonight will be - you guessed it - Smokes Sauasge and a box of Red Beans and Rice from the pantry. I wll probably add a salad or brocolli.

Thursday - Pork Chops, Bake Potatoe and Cauliflower.

Friday - DH is doing a mystery shop and it is for Pizza!

Took a package of potstickers out of the freezer last night. They were so good, I'm glad I "found" them before they got all freezer burned. I made the Disney pumpking muffins-- they were good. All I had was vegetable oil instead of the corn oil it called for and I think they would have been better if I had but...still great. I made a roast this week with one of the recipes on the crockpot thread--turned out great! I used a roast from the freezer, 3/4 a cup of red wine, 1 lipton onion soup and sliced mushrooms underneath it all. Think I'll make a big scrambled egg omelet thingy today, I've got artichoke hearts to use up, spinach, mushrooms, cheese. I also have a lot of eggs as I picked up some at Costco and husband also had picked up 2 dozen over the weekend I didn't know about. Sometimes having 2 fridges soesn't work out so well lol. Also had a lot of milk to use up this week-- 4 gallons because of the same reasons so I made 2 packs of pudding I've had for ages--it was good!
 
Well...today we had PIZZA. It wasnt on the menu, but it sure was YUMMY!!

The good thing is, we didnt need a trip to the grocery store this week. :thumbsup2 But we will soon be needing milk. MUST STAY FOCUSED!!

We have a large snow storm headed our way this afternoon so I am glad we went and stocked up at Trader Joe's yesterday. Tonight will be leftovers.
 
This week I defrosted a bunch of ground beef, and will be having tacos, burgers, and sloppy joe casserole.

Not everyone's cup of tea and not as nutritious as some may agree with here, but I love Mock Stroganoff...

Mock Stroganoff

1# 90% lean beef
2 tbsp beef gravy mix
2 tbsp flour
milk
sour cream

Brown beef with beef gravy mix and allow the bottom of the pan to get browned also (no beef gravy mix is needed if you use a higher fat meat). Once browned, stir in flour and let cook off for a minute or two. Add a cup of milk to deglaze the bottom of the pan. This should make a thick brown gravy. Use 1/4 cup more per time if needed to get the whole pan deglazed. Add scoops of sour cream. Serve over mashed potatoes or rice...

This is a major comfort food in our house.
 
We had a fair amount of snow come in overnight so I am glad we have enough food in the house for the weekend, cause I do not feel like going out in it.

Tonight we will have baked macaroni and cheese with spinach salad. Tomorrow is hamburgers with garlic fries from Trader Joe's and Sunday I think we will do something with pork chops. Not sure yet on that front.
 
i just went to the kraft.com website. i made a shopping list for my menu next week. we have a alot of stuff in the freezer but my fridge and pantry are pretty much wiped out. heres my plan for the coming week.

tuesday slowcooker chicken curry, rice

friday easy layered taco bake, vegi or salad

lunches will be leftovers and im also making a quiche. for breakfast we have plenty of eggs, cereal toast, and i can make pancakes from scratch. i have to make a trip to aldis today. i plan on getting only what i need for the coming week thats not in the pantry or freezer.

Oh genius. I just noticed that the huge pack of cheese slices I got at Costco last time aren't fat free. :scared1:
So now I need to start using them up in recipes...(instead of using them just for myself for lunch etc as I'm the only one who likes them) I put a pack in the freezer but would really like to just put them in stuff like scalloped potatoes , mac and cheese etc. The kraft website sounds promising.
 
Tonight we are having a slow cooker meal of my own creation. I took 3 bonless, skinless chicken breasts and a bunch of frozen veggies that were the last in their bags added some water and half a bottle of my favorite marinade. I plan to serve it over rice. I hope it turns out good.
 
i went shopping yesterday at wegmans and aldis. bad news is that i spent $100. due to months of being in this challenge and not shopping much for february i had nothing in the pantry or fridge. on a positive note we did not eat out this past week.

im going to try to make what i bought last as i still have my angel food order to pay for. the one positive is that it will be much cheaper having food in the house than going out to eat and paying more. since i now have a lot of food i am going to stay away from the store as long as possible and only buy bread, fruit/vegis if needed. even though i previously posted a weeks worth of menus, i decided to revise it due to my shopping trip. heres my plan for the next 3 weeks of dinners.

breakfast for dinner-2 meals
roast in the crockpot, mashed potatoes, vegi from freezer
shepards pie, salad
slowcooker chicken curry, rice, green beans.
sausage bake, vegi or salad
crockpot beef chilli-2meals
easy layered taco bake, vegi or salad

potato, egg, sausage scramble
brushetta chicken bake
hamburgers, mac and cheese, vegi
spagetti, salad- 2 meals
meatloaf, mashed potatoes, vegi -2 meals
crockpot italian sauasage over rice, vegi 2 meals
goulash, salad

we really dont have leftovers as we pack them up for lunch and eat everything up until its gone. for breakfast i have a recipie to make pancakes from scratch. we still have stuff like eggs cereal milk and plenty of fruit etc..
 
I am glad February is over. I am thinking that the grocery budget should stay fairly low as we still have a ton of meat left in the freezer. This week's menu is

Tonight: hamburgers with garlic fries and the last of the spinach salad
Monday: Grilled Ham and Cheese Sandwiches with tomato soup
Tuesday: Crockpot vegetable beef soup
Wednesday: Pork chops with buttered noodles and mixed veggies
Thursday: Leftovers
Friday: Baked Macaroni and Cheese
Saturday: Spaghetti with turkey meatballs and garlic bread
 
Ok, I really need to stay focused, plan meals and eat what I have on hand. We are goind to Disney at the end of March and I am just a little short of the money I like to take - enough but I want some padding.

This weeks meals in no certain order -

chicken thighs and legs, cauliflower, rolls
stuffed salmon, asparagus,
steak, baked potatoe, veggie
lemon marinated tenderloins, pesto noodles, veggie
stuffed chicken, veggie,
sloppy joes, roasted potatoes, veggie

I will go shopping for fresh fruit and veggies today. Let's hope I can behave.

Today I had to go to the grocery store. My bill was $171 but after my club card and coupons it came down to $80!! :thumbsup2

This week's menu:
Sunday -Bean & Beef Tostadas
Monday- Left over Lasagna, French Bread & Broccoli
Tuesday - Chicken Burgers, Fries & Corn
Wednesday - Spaghetti, Salad, Breadsticks
Thursday - Taquitos, rice, refried beans & green beans
Friday - Fish Sticks, Mashed Potatoes and Corn
Saturday - Chicken Soup
 
He has never seen my backup pantry so empty! (BIL once commented it looked like we had enough in there for 6 months!) Really, only about 10 items down there!
We head to Vegas in 2 1/2 weeks & I really like to clean out freezer before trips. Luckily I think there is enough meat to get us through...
Unfortunately we are out of pasta!

Tues--homemade chicken tenders, mac & cheese
Weds--London Broil, baked potatoes
Thurs--Fish/Fish sticks,rice
Fri--Dh & I have class OT, so kids eat at Moms
Sat--pork chops, baked potatoes
Sun--meatloaft, scalloped potatoes
We always have a fruit/veggie w/ each meal.
 
Back... A little late, but better than never!:lmao: DH and I did a major shopping trip (always do this in February, May, August, November). I spent approximately $250.00 and still need to go to the meat market. I am estimating $100.00 for that. March's grocery budget is $250.00 and that is generous. Seriously, I need to go clean the cupboards so all the food fits. There is food on the counters right now. But everything is jam packed - freezer, fridge, and pantry.

Sunday: Subway (USA vs. Canada game and tons of shopping)
Monday: Sandwiches and canned soup (this is my oldest pantry item)
Tuesday: Chicken recipe from the crockpot thread, heated tortillas, fruit
Wednesday: Frozen Pizza w/fresh salads w/more salad than pizza;)
Thursday: Pepper Steak over rice, green beans, fresh pineapple
Friday: Fish, baked fries, corn

Saturday: As always will be based on what the kids schedules are, BUT will not be eating out...
