Spring Pantry Challenge

last night, egge beaters, broccoli and cheese that I had frozen in freezer ( the egg beaters were south west style and my kids hated it)
so I made grilled cheese
we also had Escrole , Tomatoes, and Celery salad:love:

this morning I made pancakes... I made enough to have for a snack later in the day:love:

What is celery salad?
 
Last night's Pot Roast turned out really well and I am so proud of myself because it was my first time making it.

Lunch today was leftover pot roast (still have enough left for another meal as well)

Dinner tonight is roasted chicken with rice pilaf and sauteed zuchini.

The rest of the week looks like this:
Pork chops with buttered noodles and scalloped apples
Angel Hair Chicken Pasta with roasted veggies
Weeknight Ravioli lasagna
Corned beef with boiled potatoes and carrots
Turkey Burgers with sweet potato fries
Leftovers
 
I took a casual inventory of DSis's freezer, fridge, and pantry this morning. I'm going to be cooking meals at her house for the next several weeks. I'm so excited! :cool1:

There are lots of new (to me!) items as well as a few item that just need to be tossed. I'm sure I'll have some interesting meals to report!

I can't wait to get her food in order! :banana:

My freezer and pantry are looking good. :3dglasses Homemade meals are portioned out in the freezer, and the pantry shelves are organized with some pasta, rice, and canned goods that won't go bad in the near future. The fridge only has condiments and a few items good until Spring. I'm very happy with how everything turned out! :wizard:

Did my shopping yesterday. Spent more than I wanted but I brought DH with me...;)

Sunday night I made Homemade Chicken Potpie with tons of veggies and homemade applesauce. I always find this week to be my hardest of the month and I really have to keep myself motivated.

So here's my hopeful wishlist for this weeks dinner:

Monday: Soup and Sandwiches (DD has work and no school for either kid)
Tuesday: Chicken fingers, tator tots, and creamed corn....
Wednesday: Take-Out :(
Thursday: Pork Chops, gravy, garlic mashed potatoes, and brocolli
Friday: Southern Ham Casserole with green beans and melon.
Saturday: Open as usual
Sunday: Digiornio pizza party (houseparty.com)

Hope everyone have a great week, I will be around with changes, and looking for and providing recipes. Stay strong - it's week #3!!:scared1:
 

Well, my willpower was weak but I found that by having the menu on the fridge I stuck to it today! Here's the plan for the week:

Monday - Taco Pie
Tuesday - Mostaccioli (also cooking for a family that had a death in the family)
Wednesday - ??? DD12 has a volleyball tournament at 4:30, if they win that game they play again at 6p, win that they play at 6:50p. Will be an interesting night!
Thursday - turkey, broccoli, stuffing bake (freezer)
Friday - ham casserole (freezer)
Saturday - leftovers
Sunday - MILs


Also logged my spending and have only spent $78 on groceries so far this month - yay!! Thankful though that the stores haven't had any good sales/catalinas lately. ;)
 
Today for lunch we had the last of the pot roast.

I did my weekly shopping at Aldi's today for items to round out this week's menu and for staples like bread, milk, and yogurt.

Dinner tonight is Hamburgers from Five Guys as my Mom got a giftcard from a friend for Christmas and neither of us feel like cooking tonight for some reason.
 
Tonight was a good "use up" night! We had salmon (freezer) and the last of the sweet potatoes, zuchini and salad fixin's. Leftover brownies from yesterdays sleepover for dessert.

Tomorrow night will be bad. I have to work 1pm-11pm so I will have to get take out. Youngest dd has student council after school, so she and dh will do takeout on their way home. Bad, bad, bad...but sometimes it can't be helped!

My pantry and freezer are "officially" closed now! I tossed the remaining questionable items and set aside the foods I'll be taking with me to DSis's.

And then I get to start on her pantry and freezer! :cool1:

Tonight was leftover pasta. I'm also finishing up a partial chocolate bar I found in the pantry. Hey, every little bit counts, right? ;)

The last of the eggs and citrus are breakfast, I made zucchini bread and an apple crisp for break time, for lunch I'm still plugging away at all my (freezer) soup, and I probably won't have to worry about dinner tomorrow, but I do have some stroganoff in the freezer if needed.

Two more days of regular work - and then I get to be a SAHA (Stay at Home Auntie :lmao:) for three straight weeks. I can't wait! :goodvibes
 
You all are doing a great job and also giving me some good ideas!

I had to work out of town all weekend including Monday so I am not prepared for this week but reading the posts has put me back into the "challenge mentality".

Sooooooo....tonight? dont know! But for the rest of the week I have frozen stew meat and frozen pork chops so I'll do stew and crock pot pork chops with noodles. I have a bunch of fish but DH doesnt like fish so I'll probably do spaghetti in there somewhere. I'll have to go to the store over the weekend sometime though.

I just made up a couple of bags to donate to my churches food drive, jars of pasta sauce, boxed pasta kits, boxed baking mixes, and some other stuff. I realized this month that I really just don't use them all that often.
 
I was starving so I ate 3 small smoked sausages, some whole potatos and spinach and a beef pot pie.
 
I spent today cooking. We had some sweet potatoes that were near the end of thier days so I made sweet potato fries and after the cooled I froze them for the future. I ended up with three bags, cheaper than buying them in store. I also roasted the zuchinni and grape tomatoes with garlic and olive oil for my angel hair chicken pasta withroasted veggies. I also cut up some green peppers I got for super cheap at Aldi's yesterday and froze them to throw in stirfrys and fajita's.

Lunch today was english muffin pizza's.

Dinner tonight is chicken and dumplings using the leftover roasted chicken from the other night.
 
So this week is going well, Sunday I made Pot Roast and was able to put together two Sheppard's Pies from the leftovers, we had one last night and the other went to the freezer. Monday we had Ham and Hashbrown casserole from the freezer. I am not sure if tonight is going to be leftovers or Ravioli. DH has to stop at the funeral home on the way home and DD1 has a horrible cold so I am not sure if she will eat Ravioli. Tomorrow is chicken nuggets as DH will be OOT. Friday will be Turkey Chili and Saturday will be the left overs from the Pampered Chef party I am having in the afternoon. (Subway platter and Baked Potatoe Chowder).

I hope to get through next week without buying anything other than milk, bread, eggs and salad. If I can do that I will have the freezer empty!!!
 
My weekend didn't go so well. We went to a discount store in a neighboring state and did some stock up on things we really didn't need. Spent $27 on "good deals". Sigh...

Today for lunch - leftover pesto pasta and a salad. I have a freebie slim fast bar for lunch.

Supper - dh is grilling one lone steak I found in the freezer. He is also grilling some zuchini and banana peppers. We will also have a baked potatoe.

Tomorrow lunch - Not sure because it doesn't sound like there will be leftovers.

Tomorrow - Salmon, Rice and a veggie in the rice maker.

I was too lazy to drive to my normal store this week so I went to this one that is a bit closer expecting to get "ripped off" but I was pleasantly surprised. We were getting our new bed delivered today too.

The store was having a BOGO sale. I ended up getting tilapia, Brownberry Bread, potatoes, and onions on the BOGO sale. I saved nearly $30.00 with the store discount and my bill came to $115.00. It was also a MEAT week for me so I was surprised it wasn't more! I totally forgot cat food and litter so I have to go back!

This is what I am making for the week:
French Onion soup with cheese on top and baguette for dipping(Paula Deen's recipe)
Bottom roast with leftover onion soup in the crock pot (5 ingredient fix)
roast beef sandwiches with leftover pot roast(5 ingredient fix)
ribs and sour kraut and potatoes
fried chicken brined in apple cider and battered
taco soup (Paula Deen) can you tell I watch a lot of Foodnetwork?
plus my freezer is still over flowing with my Weight Watchers meals I bought last week.
 
i've been working on my freezer. ive done a pretty decent job. heres the week so far and what i plan on doing in the future.

sunday we had pork chops, mashed potatoes, and salad
monday-spagetti w/ pesto and shrimp
tues-hamburgers, baked beans, green beans
tonight-shepards pie, salad
thurs-fried rice made with vegis and diced ham
friday-breakfast for dinner
saturday-italian sausage, oven fried potatoes, green beans

lunches this week have been leftovers. breakfast has been our usual. spent $113.00 this month so far. for the rest of the month and all of next, the plan is to buy produce, bread, milk, and coldcuts. other things will be bought only if i completely run out.
