well i just did an inventory of my pantry. after doing this challenge for a couple of months, along with hurting my leg and being unable to go to the store, my cupboards are pretty bare. i did an inventory. this is what i have left:
lots of spices (includes cornstarch, bouillon cubes)
beverages like tea, hot chocolate,coffee etc..
two cans of pork and beans,
2 jars of spaghetti sauce,
4 cans of vegitable soup,
2 boxes of onion soup mix,
2c. long grain rice,
4 boxes of cereal,
2 pouches of fibre one pancake mix,
4 boxes of cake mix
2 boxes of microwave popcorn
2 boxes of special k bars
2 boxes of brownie mix
powdered milk (in case of snow storm)
thats all. my fridge and freezer is a different story. they are both pretty full. to me this is a big improvement as my pantry was overflowing. we had a difficult time shutting the cupboards in our pantry.
this month so far i have spent $50 out my my $200 budget and i spent $59 on my angel food order (which i pick up next week). that leaves me with $92 dollars to stock up. today i will be looking at the adds and my coupons and will be trying to stock up again. if i go over then that will be ok as the past few months i have been anywhere from $35 to $40 dollars under budget. but i really dont see that happening.
i am thinking of making up a batch of master mix in which i can make pankcakes, biscuits, and muffins from scratch. i also plan on making a mix for cream of something soup. i have all the spices/ingredients in my cupboard and is a replacement for cream of mushroom soup in casseroles. dd loves quiche so this weekend i have to make i will also be making that and will be using pie crust from scratch rather than pre made pie crust. the quiche will be 1 dinner and lunches for the week.
wegmans has a 5 pound sack of mozzarella and cheddar cheese for $8.99 each. i usually portion the cheese out in ziploc bags and freeze. it works out to less than $2.00 a pound and i use those cheeses in casseroles and quiche. it will last us a long time. i also plan on buying pasta, stuffing mix,a couple of boxes of mac and cheese, bag of rice at aldis. we have enough produce and milk. i also need salad and bread.
tonight we will have a pork roast, mashed potatoes, and cauliflower. the leftovers will be made into shredded pork sandwiches, fries and a salad for sunday. monday will be quiche and salad. tuesday will be homemade soup and master mix biscuits. wednesday breakfast for dinner, thursday spagetti and salad. friday-leftovers.
lunches will be leftovers and quiche. breakfast are the usual oatmeal or cereal, fruit and milk, or eggs toast, fruit, pancakes or french toast. will post later on how my shopping trip went. have a good day everyone!!!
