Spring Pantry Challenge

I ran in to Aldi for some fresh produce milk, yogurt and eggs and came out 101.00$ later:rolleyes1.. I found brown sugar marked dow to 50 cents a bag so, I bought 10
 
dinner..French toast with brown sugar and the Whole wheat bread (that they all" hate") Yogurt, and strawberrys, and cottage cheese

Went out and did a little grocery shopping for the week today (as well as some non grocery shopping, what every girl needs a new pair of valentine themed jammies :goodvibes:) Spent about $60 but that included cat food and cat litter.

Tonight we had some beer brats I had found in the freezer along with homemade german potato salad.

I have made a menu plan for next week and included some of the items that we did not get to this past week.

Chicken fajitas with spanish rice
Potato and double corn chowder with sandwiches
Pot Roast with Mashed Potatoes
Pork chops with buttered noodles and scalloped apples
Ham with scalloped potatoes
Baked macaroni and cheese
French toast with sausage and fruit.
 
Tonight was turkey wrap with some reduced deli meat I picked up, and I have enough to make another one for lunch tomorrow too.
 

Ok I finished cupboard inventory last night, next step freezers. Weirdly enough I ended up with 6 lg cans of corn chowder. Wish I could find some recipes that used corn chowder but all I can find are recipes on how to make corn chowder. Seems a few use crab so I do have 3 cans of crab I got in the christmas mark downs so I'll add some crab to it I guess. I can never just eat soup from a can-I have to add stuff to it. I've never even had corn chowder in my life lol.
The butternut soup turned out allright by the way, I did add some applesauce to thin it down a bit.
 
Lunch was little wieners wrapped in crescent rolls. I had some little wieners left over from New Years appetizers. Sliced up some apples and glasses of milk. Kids thought that it was a party.

Love it! I try to make meal time interesting when I'm caring for DNiece6 & DNephew3: breakfast (or breakfast for dinner) becomes Chef Mickey's, leftovers night becomes a buffet at Crystal Palace, Italian food becomes Mama Melrose, you get the idea! We also do lunch picnics on an old comforter in the living room and watch old Disney planning videos. :goodvibes

DMom is getting into the freezer portion of pantry challenge - I ate over at her house last night. She baked some coconut shrimp that I KNOW have been in there for at least 2-3 years. DDad and I were brave and ate several, but most ended up in the garbage. The breaded cod and Texas toast were still good, though! :thumbsup2 I'm really encouraging her to take an inventory of what's in her basement freezer.

As for me, I think I'm in the same place I was a week ago. I still have 24 portions of soup in the freezer (plus 1 beef stew), a handful of dinners, and some odd meats that need to be cooked up. I think beef stroganoff will be on the menu shortly!

I think I'll go make some French toast with Hawaiian rolls from the freezer I took from DMom (or that she gave me? ;)) and then head to the store for some mushrooms and get going on that stroganoff!

snack ..my dd made a cake for her teacher...it did not turn out so good, so we are eating that for snack

I am off to do a little grocery shopping. We have a small store right near us but it is usually expensive. They have a few items on sale that I will use and since it is -15 out there, this will have to do for now. I won't have my whole week's menu until tonight since there is no actual shopping but:

Sunday: Chicken and Dumpling Soup (sounds so good since it is so cold)

My neighbor is having some gastric surgery this week. She had a gastric bypass about 2 years ago and has a leak between her old stomach and her new pouch. I guess it's pretty rare. She is on a liquid diet a few days before her surgery on Tuesday and brought me grocery bags full of food. She will be on a feeding tube for awhile.
I am making some barbecue chicken pizzas with dough she gave me from "Taste of Home." I also have some instant grits so I may make some shrimp and grits this week too.
Even though I am sad she has to have this surgery, I am very thankful she thought of us:)
 
dinner.. I am going to use up some of the turkey I had and froze from Christmas.. Also I am going to use the box of frozen corn and fresh mash potatoes.

I just cleaned out the freezer and took an updated inventory of the freezer, fridge, and pantry. I came up with over a dozen meals I can make with minimal additional ingredients. :thumbsup2
 
So we had a little change and last night had some frozen fish for dinner, couldn't face chicken again.

Today for breakfast we had oatmeal and juice. Lunch was leftovers and some potato soup. Dinner is a Chicken Divan Casserole, (facing the leftover chicken). I used up the last of the chicken, some frozen broccoli and some mushrooms knocking around in the veggie drawer. I've been doing a good job of using up fresh things but need to get back into the freezer and see what I can find. I will work on a menu and see if I can get posted.

I'm working on finding ways to use up frozen strawberries and blueberries.
 
Breakfast today was toast, eggs, and grapefruit with orange juice.

Lunch was the leftover brats and german potato salad from last night.

Dinner was chicken fajitas with spanish rice.

Tomorrow's plan is for potato and corn chowder. I already have the bacon browned up and ready to go.
 
Today was baked potato soup for lunch, yummmm!!! Dinner was crockpot jambalya with shrimp, turkey kielbasa and chicken breast. I also made a casserole of left over yellow spanish rice (last night), a can of black beans, 6 oz. of the turkey kielbasa and some shredded cheddar. It is really good. I'll pack it for lunch tomorrow.

I have a ton of jambalya left over and some enchillada casserole from Saturday night. Hopefully, the kids and DH (another snow day tomorrow) will eat the rest of the enchilladas and the potato soup tomorrow. I'm taking the black bean and rice casserole tomorrow for lunch.

I think I'll put barbeque chicken breasts in the crockpot tomorrow for dinner tomorrow night. DH can do some corn and boiled potatoes to go with it since I work late tomorrow.
 
I pantry cleaned Nov and Dec and now am restocking.

This week my local store is doubling coupons up to $1.99! I am going to town with restocking that pantry! I actually have nowhere to put some of this stuff! We will have a pantry in the basement, but everything has to be out of our basement for the electrician and drywallers for a while! Yikes!

Monday: Leftovers (not a great way to start the week:eek:).
Tuesday: Beef burrito's, chicken fajita's, or nacho's, spanish rice, refried beans, apple compote.
Wednesday: Chili over macaroni, topped w/leftover taco cheese.
Thursday: Leftovers... How sad :(
Friday: Breakfast for dinner... I'll let the kids choose which one.
Saturday: Open as always based on the kids schedules and the weather.

I made banana bread for a few breakfast meals for the kids, have tons of cereal, oatmeal, and english muffins.


I must admit I spent $40.00 at the store I never shop at today because of the weather. They are usually very expensive but had Peter Pan peanut butter for 99cents so I bought three more. I know I stocked the pantry, and even a little bit more, but how can you go wrong with .66cent peanut butter, even if I bake cookies with it.

I also want to make chili this week, so I may change out a few menu's. I was very excited:woohoo: that I stuck to last week 100%. Here's to a great week for everyone. Diane.
 
Today I made soup for dinner and used up five cans from the pantry.
 
Hi all! Decided to jump on board for a week or 2. The weather here has been so bad, I've had DH pick up the groceries the past 2 weeks when he is out in the pickup, so now I am back to having too much in the fridge/freezer/pantry. Anyone else's dh not stick to the list:rotfl:?! Today's goal is to take an inventory & come up w/ a menu for the next week or so.
 
Yahoo.. made it through week one. DH and I made our menu last night for the week. This may not be exact order but these are the meals we planned.

Sunday - Italian beef sandwiches
Monday - Turkey breast, stuffing, cranberries, corn
Tuesday - beef and noodles (leftover beef from sunday), veggie
Wednesday - Pancakes, turkey bacon, fruit (kids requested)
Thursday - Chicken and rice, veggie
Friday - Pizza, salad
Saturday - Venison, rice, veggie

We have used some new receipes and have found some new favorites for the family.
