I absolutely loved the spring pancake at the Lotus House/China booth at Flower and Garden this year. I had never had anything like it in my limited Chinese buffet and takeout experience, but I also don't eat a lot of authentic Chinese food.
I tried to find something similar on a local menu around my area (Minneapolis St Paul), even just the pancake part, and wasn't having a ton of luck finding the right thing. Does anybody have a recipe for something similar? Or any fellow Minnesotans have any ideas of where to look?
I found a few local Chinese places with some sort of pancakes on the menu, but they looked more dry/tortilla like, while the F&G spring pancake was thick and a touch oily.
