I made muffins last night using an opened bottle of apple juice. It smelled fine. DS just took it out of the fridge and it fizzed when he opened the bottle. It smelled gross so we dumped it. Is it safe to eat the muffins I made with the juice last night? They are being stored in the refrigerator and they were obviously baked in the oven. Everyone had one last night and two of us ate them this morning before we discovered that the juice had spoiled. So far we are all still alive! Do you think they are fine?

You should be just fine, the acid content of the juice makes it difficult for anything bad to grow in it. What happens is it starts to ferment and become hard cider, still drinkable and perhaps add a little life to any tea party you serve those muffins at.

The apple juice isn't really spoiled, it's just fermenting and turning into hard cider. Some folks will drink that stuff straight. :goodvibes Your muffins should be fine.

Duh! I didn't even think about hard cider. Thanks!!
