My favorite is basil, fresh or dried. Second favorite is cumin. I can't help but close my eyes after opening those containers and smelling them. When we cut sodium from our diet, herbs and spices became so important. I grow lots of fresh herbs in the summer and dry the extra for use over the winter.

I also agree with smoked paprika. Roasted cauliflower is leveled up with a few spinkles of it. :)
 
If there is two I never use even if called for. is Rosemary and those litlle spikes like things you stick in a ham. For some reason hate them both with a passion.

Cloves are the little spikes you stick in a ham. At one time I had both whole and ground cloves, but I discarded both ancient jars when stuck at home during the early weeks of covid. Neither had been used for many years.

In the summers I grow basil, parsley, rosemary, cilantro, mint, oregano, thyme and dill. I use the basil the most. To me, basil smells like summer.

I cleaned out my dried spices during Covid and am slowly but surely replenishing. Just this week I needed whole cloves, ground cloves, allspice and ginger and didn’t have them. I was prepping for a “Friendsgiving” today. We didn’t celebrate with anyone outside our household last year so the holiday menus were more limited and didn’t need nearly as many.
