Speaking to the chef

I've been waiting to see if the Le Cellier menu would be updated since my family will be dining there in a few days. But it doesn't look like it's been updated. I'm a vegetarian and the vegetarian entree is mushroom ravioli. I really do not like mushrooms and would want to order something else. I know that the best way to do this is to call ahead of time so the chef can prepare something else. How do I go about about doing this? Do I call the regular Disney dining number and ask to speak to someone at the restaurant? Or is there a number to directly call the restaurant? I'm assuming others have done this before so I would appreciate any help.

2) The Call Center at the resort can get you to the restaurant.
