I agree...kids options are limited. And even tho my kids eat nuggets...they too get sick of them. Keep in mind, however the cost of the kids meal plan - basically your one TS meal for the day just about puts you out ahead - so consider the CS 'icing on the cake'.
The way we've handled it is - plan very carefully where we eat for the most variety. Sunshine seasons in EPCOT has sweet and sour chicken, Pinnochio Village Haus in MK has pizza, Main St Bakery in MK doesn't have a kids menu so you can get a muffin, sweet and drink (I believe this is still the case) with a kids CS credit, Wolfgang Puck Express in DTD has lots of options, other than that -we have been known to split a few adult CS meals (maybe adding in a snack credit or two) and then use the kids ones for some breakfast items at the resort food court. Speaking of which, the resort food courts have some of the best kids meal variety, IMO - pastas, sandwiches, etc. so check those out and plan to use some of those credits there. When all else fails - you can always buy a meal or two - like I said, the kids plan is so cheap you're still coming out ahead even if you decide to do this to give more variety here or there.
