I don't see this popping up on the spa/fitness activity options for my cruise. Is this something to book on the ship?

I found it in the area to purchase cruise amenities. Like water, flowers and alcohol section.

I think most of the classes, you'll have the option to book onboard. Like the personal training, spinning, yoga, foot clinic, etc. Information will be in your navigator, and in the fitness/spa area itself.

If you are referring to the Rainforest Room day pass, you can prepurchase that using the form available under the "gifts & amenities" section. Day passes are not always offered for purchase once onboard.
