I'm undecided about whether I want to book a spa appointment for our Nassau day on our 3 day cruise or wait to see what specials might come up while we're onboard. If I were to book at 75 days out what would be the latest that I could cancel with no charge? Any chance that I would be able to know what might be offered before this deadline? Thanks!

No, you won't know for sure what will be offered at the 75 day mark. You could peruse old Navigators to check out what was listed there - and I don't think there's a consistent response on whether or not you'll be charged for cancelling a pre-booked appt after boarding even though the stated "policy" is either 24 or 49 hours prior to sailing.

I know on our 7-night cruises, there's never a problem with booking "something" once you're on board. I couldn't say for sure what the situation is on the 3-night cruise, since there's a lot less time for everyone to enjoy the spa!

You have until 3 days before your sail date to cancel your spa reservation without penalty. After that your reservation will no longer be available on line and all changes will have to be done on board. They may not charge you (particularly if you are changing one treatment for another), but that will be at the discretion of the Vista Spa staff. Technically they can charge you if you do not cancel before that 3-day mark.
