I did a search and couldn't find an answer to this question. We are traveling to WDW December 3 - 11. I think it is quite likely that the last date released will be between those dates. If that's the case, is there a downside to purchasing the airfare for the trip down separately or should I wait until all dates are released?
 
You can do this, but some fares require ROUNDTRIP travel. I got DING!ed but my return flight wasn't available. I just bought a one-way ticket at $102 using the DING! then tried to get the return flight separately, and the only fare available was the REFUNDABLE ANYTIME at $175 per person. Ugh! Ended up cancelling everything and booking a roundtrip ticket.
