I've got a great buffalo chicken strips and homemade creamy cole slaw dish that I make for parties and everyone eats it up. I'm always amazed that with all the pizza, fried chicken wings, spaghetti and other carby food, my chicken and cole slaw is always the first to be devoured.
Buffalo chicken strips:
4 nice sized chicken breasts cut into long strips
2 eggs
1/2 cup 1% milk
parmesean cheese
1 cup of canola oil
seaonings (salt, pepper, seasoning salt, garlic powder, etc.)
1/2 bottle of Hot Sauce
1/2 stick of I can't believe it's not butter or another butter substitute
I mix the egss and milk together and then soak the chicken strips in it
Mix seasonings into parmesean cheese and coat each chicken strip thoroughly
Fry each chicken strip in the oil in a frying pan on the stove for about 5 minutes on each side
Meanwhile melt the butter in a small sauce pan and then pour in a large bowl, add the hot sauce and mix thoroughly
Remove chicken from pan and blot any excess oil
Soak each chicken strip in the hot sauce butter mixture until well coated
Place the strips on a foil lined cookie sheet and bake in oven on 375 for 10-15 minutes
Remove from oven and they are ready to serve
I then take a bag prewashed cole slaw and mix in light miracle whip and 1-3 tablespoons of Splenda (sugar substitute)
I have a large glass serving platter with a round section in the middle and I put the cole slaw in the middle and arrange the buffalo strips around it. Everyone always raves about how good this is!
