South Beach Diet?

SWMBO and I have done South Beach in the past, but, alas, fell off the wagon. So, two weeks ago we started Phase 1 again after we got back from our vacation (a cruise and visit to WDW).

We have all 4 South Beach Diet books. We just got the Taste of Summer cookbook and the Quick and Easy Cookbook - there are some GREAT recipes in there. SWMBO is continuing with Phase 1, and I am working slowly into Phase 2. Last night for dinner we had South Beach Shrimp Scampi (awesome) and for a veggie we had Asparagus with Lemon Aioli sauce (also awesome). So far, I have dropped about 17 pounds.

Here is a tip: Really READ the book and understand the effects foods can have on your body. Pay attention to how your body reacts to foods - this is especially important in Phase 2. When you hit Phase 2, add carbs back SLOOOOOOWWWWLLLLYYYY. Phase 2 started for me yesterday - since then I have had 1 multigrain waffle with yesterday's breakfast, 1 small bowl of multigrain cereal with 1% milk and Splenda, and today I had a whole-wheat wrap for lunch (wrapped around some turkey/swiss/salad/ranch dressing).

I find I am more conscious of the carbs/fiber/fats I am putting into my body.

Also - EXERCISE. Diet will help, exercise seals the deal.

Well I am on day 3 of phase 1. I think I'm doing okay...felt a bit nauseous the first two days, but don't really feel that bad today. I can say I am sick of salad, but I'll get over it (this has been the easiest thing to pack for lunch). I have a few challenging days ahead, as I will be out of town for a conference at work. Keep those tips coming, everyone!
 
I have been a bit scared to go into phase 2 fully. I have had a fruit a few times but I haven't had really any grains yet I consider myself in phase 1.5. Once I hit 200lbs I will start adding in a daily fruit probably an apple or maybe some berries. I really don't have any desire to add in any grains and will probably save them more for special occassions.


Conway you may have the South beach flu sometimes your body is detoxing! If you can have some more beans.

JCJRSmith Yummy sounds like you are making some great meals.
 

My family has pizza every Saturday night-I simply do a pizza bowl. I get a decent size soup bowl. Spray the bottom with oil, put a bit of mozerella cheese, pick a couple of pepperonis from their pizzas, do some red onion, lots of tomatos and a bit of sauce and some mozerella cheese on top. It has really helped as I thought this would be the downfall of me.

Another question...after reading through things...what do you all eat for breakfast? Seems like a ton of eggs?

DH loves eggs so we have been eating a ton of eggs. I buy a no sugar added deli ham & cheese (sharp cheddar, pepper jack or combo) & scramble them in. They are marvelous & takes less than 5 minutes to cook. We have a cup or 2 of black coffee with them.

I'm working on the meal plan for the week. This definitely takes time, but I'm sure it will be worth it. I'm stuck on snacks...not a big fan of nuts. Plus, I'm trying to figure out how to pack everything for lunch to take to work.

Someone mentioned balsamic chicken...do you have a recipe? I bought the supercharged book, and I didn't see that recipe. Thanks for all the great suggestions!

Snack suggestions: raddishes, celery w/small amt of organic no sugar added peanut butter, deviled egg, low fat mozerella prepackaged cheese snacks & I know you don't like nuts, but only 15 almonds or cashews aren't that much but they go rather nicely with a bottled water flavored with those individual packs of crytal light. See next post for balsamic chicken....

GREAT ADVICE! Read the book & do add carbs back slowly. You'll soon see what your body can & can't take. We are actually able to enjoy whole grain pasta once a week in Phase 2 with no adverse effects. Our bread of choice is Ezekial 38, no sugar added, really high fiber & protein. We get it at Trader Joe's. DH is using his treadmill 30 minutes a day, he's having more sucess than I so you are spot on - exercise does seal the deal :thumbsup2

Hang in there, Phase 1 is the hardest!

Don't be, if you don't add to your plan you may get bored, frustrated & that's when you give up! Just go slowly as JCJRSmith recommeneded :thumbsup2
 
I hope it's okay to type this recipe from the book:
6 boneless, skinless chicken breast halves
1.5 teaspoons fresh rosemary leaves, minced or 1/2 t dried
3 cloves garlic, minced
1/2 t freshly ground black pepper
1/2 t salt
2 Tablespoons extra virgin olive oil
4-6 T white wine (optional)
1/4 cup balsamic vinegar

So as to not totally plagerize, I will paraphase directions! Add everything from rosemary to salt in bowl, drizzle chicken with oil & rub the spices on it. Cover & refrigerate overnight.

Bake in preheated 450 oven on sprayed pan or iron skillet 10 minutes, turn chicken & bake another 10 minutes BUT if the drippings are sticking, stir in 3-4 T wine if using (or water, not wine if prefered)

Ovens temps vary, it may not take the full 20 or may need a few minutes more to bake, it's done when a thermometer inserted in thickest portions registers 160 degrees. Again, if pan is dry when finished, stir in the remaining white wine (or water) to loosen the drippings. Lastly, drizzle the balsamic vinegar over the chicken in the pan.

Place chicken on serving plate or individual plates. Stir liquid left in pan & drizzle over chicken.

NOTE: I don't always have time to mariante it over night, no that's not true, I have time at night I just forget. Not to worry, you can still make it for dinner. What I do is get the spices mixed, add them direct to the olive oil & then mariante the chicken in it as long as it takes me to chop veggies or get the other prep. done for the dinner. Of course, the marianate takes better if overnight but in a pinch you can still go for it. I find also if I pan "fry" the chicken on the stove top using an olive oil cooking spray that the olive oil with the spices cooking in the pan with the chicken will flavor it rather nicely plus I like to see a little browning on the chicken. Then I'll adjust the baking time about half. WHatever works for you - ENJOY!

I'm down over 30 lbs, still have a ways to go but even though I'm not where I need to be I'm not where I used to be :laughing:

Another play on pizza... For your crust you can make a thin crust using ground beef. Press the ground beef(very lean) in the bottom of a pan and bake it until it starts to get a little crispy and then put your topping on and bake in the oven like normal. I put some italian seasoning and pepper and garlic powder in the raw beef and then press it out. You can make it a thick crust as well but I prefer it to be as thin as possible.

Another way I just tried the other night and this uses a cheese crust. Put your cheese in the bottom of a pan and let it brown a little in the oven and then make your pizza like normal.


Both ways are pretty good and end up looking like a normal pizza as opposed to a pizza in a bowl.

I am looking over phase one, (can't start for a few weeks) and I have a question...It lists 2 tablespoons low sugar dressing with the salads.. I have light ranch with 2 g sugar per 2 Tbsp serving...do you think that qualifies as 'low sugar' or should I stick with oil and vinegar?

You should be okay. We choose to avoid anything with sugar in Phase 1 so we did make our own garlic oil salad dressing spicing it with garlic, onion & herbs. But Phase 1 also calls for low fat cheese, we didn't do low fat :laughing:

Most important IMO is that you follow the portion guide if you're doing over the counter dressings so you don't inadverently have more sugar than you intend. The point of phase 1 (I think) is to rid your body of the excess sugars & bad carbs. Good luck :hug:

If you don't want to purchase the SouthBeach book (we borrowed our friend's) you could see if your local library has it. I think it helps to read over all the material about how the food works with your body. Good luck - we'll be here cheering you on :cheer2::cheer2::cheer2:
 
I add a banana yesterday and it didn't end up triggering any cravings! I was a little nervous about it.

Jenn-the meat crust pizza is another great idea! I did this with last week with some burger patties. Very yummy! and totally a lowcarbfriend fan as well. Lots of motivation on that board.

I had a HUGE hicup the last 8 days at WDW :lmao: THis trip was planned before we started south beach & included the dining plan so it was desserts galore! I did try to NOT eat every single one but I admit, I tasted every single one :lmao:

I gained 5 lbs & DH gained 7 lbs so it's back on the saddle for us! Today was our first day back, we are going to do a combo of phase 1 & 2 meals to get back on track. I want to recoup my loss rapidly if possible :goodvibes

Tomorrow will include a visit to the store to stock up on a lot of fresh veggies & fruits cause Mother Hubberds cupboard is bare :laughing:

If you have cravings for the sweet stuff I would go back to phase 1 for a few days.

I have to say I like your logic here :rotfl:

We are going to lean more towards the phase 1 with exception to some whole grain cereal, sandwich breads & the fruits. DH doesn't think he can handle the total restrictiveness of phase 1 again :laughing:

Seriously, I do think you're right about the quick re-gain hopefully that will come off rapidly and then we'll be back on track with our original goal. We had both lost about 35 lbs before our trip so the good news is we still have about 30 lbs off each. DH skipped lunch yesterday & went for a jog and now that he's back to work he'll be doing the treadmill (indoors) at lunch again. After all the walking at WDW once this outdoor heat advisory lifts & my feet feel better again I think I'll have better stamina for walking too. And there's always the pool if I can get my laundry & other chores caught up.
 
Back after a week away on a family vacation. Lots of food but I stayed pretty South beach except for a few meals. I was up 2lbs but hopefully just water weight.

How is everyone else doing

DH & I managed to lose all our WDW weight gain about a week after getting home. Unfortunately, we're up a little again due to DS & I having our birthdays plus DH & I's wedding anniversary last week. There was a little excessive celebrating with family in over the weekend so we're doing our best to get back on track this week.

I think summers are hard because it seems we have less structure around home. Now that school has started, vacations & all the celebrations are over we can get back into our "groove"

We have lots of tomatoes from the garden so we've been having a lot of BLT's lately :laughing: But I need to get motivated in planning some delicious south beach friendly dinners again ;)
