awhile back, and I think I'm losing my mind because I can't find the thread. I looked here, and on the CB.
Anyway, a big THANK YOU
to whoever recommended them! I ran out and bought 5 bags of them at that time (several weeks back). I made a huge batch of Rice Krispy treats with them (a big hit at my DD's college), but what turned out even better was the pumpkin fudge I made last night with them. OMG so good! I used the Carnation fudge recipe with a few subtitutions/additions (it's the only one I could find that used marshmallows):
1 1/2 cups granulated sugar
2/3 cup NESTLE® CARNATION® Evaporated Milk (I used generic fat free evaporated milk)
2 tablespoons butter or margarine
1/4 teaspoon salt
2 cups miniature marshmallows (I used two cups of pumpkin spice marshmallows)
1 1/2 cups NESTLE® TOLL HOUSE® Semi-Sweet Chocolate Morsels (I used white chocolate morsels)
1/2 cup chopped pecans (I used walnuts)
1 teaspoon vanilla extract
I also added 1.5 teaspoons of pumpkin pie spice
1.LINE 8-inch-square baking pan with foil.
2.COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.
I put it on super low heat then before the next step, because with the bigger marshmallows, it took more heat/time to melt them.
3.STIR in marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan; refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into pieces.
My family were the taste-testers...everyone loved it, and my DD said I should set up a table on campus to sell it, lol. So good, and SO easy!
