Solo Signature Dining

So next year I finish my Master's thesis and will be taking one of my best friend's to WDW for her bachelorette party for a long weekend. Talking to DH I may tack on a few days after my friend goes home for a quick solo trip. One of my favorite things at WDW is signature dining, but I'm wondering which restaurants have the kitchen seating set up which is so well suited for solo diners. I know about Jiko and Flying Fish, but where else?
 
CA Grill also has a row of seats in front of the sushi station, in addition to the bar, and I've seen people eat at the bar in Narcoossee's but it might be a more limited menu. (Eating a whole lobster at the bar sounds like a huge mess to me)

I don't know if they're considered Signature places, but the Bluezoo bar serves the full menu and Kimonos has both a bar and a normal sushi counter.
