And as a cast member who works at Soarin, I can definitely confirm that you canNOT undo the seatbelts during the flight. In fact, once you buckle the belt if you need to undo it (while everyone is loading) we have to release it.
Riders who don't reach the red marks on the seats (the Soarin logo design) need to put the seat belt through the loop first and then buckle. If a child doesn't have theirs done, then we need to release the belt so it can be re-done correctly before we can launch the flight. Safety is the top priority!!
