It was pretty easy, except for when the tortillas wouldn't cooperate. I just browned some ground beef with onions and spices, warmed the tortillas and wrapped some of the beef inside each one and put them in a cake pan, then drizzled enchilada sauce (the pre-made Food Lion brand stuff) and cheese on top and baked for a little while. My mom told me how, actually, though I'm not really sure how she knew, since as far as I know we've never had homemade ones before. But they did come out pretty tasty.
