Likely to make my trip at the end of October less busy and easier to get reservations.

Also as we are staying offsite and not entitled to 180+10 ADRs, I am assuming this means it will be more difficult for me to get ADR's because other people have already been able to book in advance for the day(s) I want.

I only plan on booking two evening meals, Chef Mickey's and California Grill. Does anyone know what time Chef Mickeys opens for dinner, I would like an early one with the kids.

I'm sure you'll have no problem getting your ADRs, most people do not book 180 days out.
