So how important is it to mix ingredients in the right order?

I'm making my mom's cheesecake for only the 2nd time to take to a friend's house tonight...the first time I forgot to grease the pan, but it was fine! WHEW! This time I goofed up how to mix a few of the ingredients. It LOOKED okay. Wish me luck!

If your cheesecake looked fine then it probably is. The importance of mixing things in order varies greatly depending on what you're making and what specifically you did out of order.
Using your cheesecake as an example I would say it's important to mix the cream cheese and sugar first, before adding any liquids, because this will enable you to mix it for a long time to make the cream cheese smooth. If you were to start with eggs and then add the cream cheese and sugar you will generally end up with lumps in your mix or you will have overmixed your eggs ending up with a different texture. On the other end of the spectrum it makes virtually no difference as to when you would add your vanilla.

Anyway, probably more than you wanted to know, but good luck with your cheesecake... I bet it's great!
 
Thanks! That is helpful. THe problem is I was supposed to mix the eggs and vanilla and add to the cream/ricotta mixture...but I mixed the eggs, butter, vanilla nd sour cream together and then added it. UGH.
 
What you did is no big deal at all. I think they tell you to put the eggs in first because it is easier for them to break up by themselves as opposed to being in more liquid. But really the way you did it is fine.

Hmmm.... now I want some cheesecake!
 

With cheesecake, it is pretty important to mix the wet ingredients and the dry in order. The most important thing is having your cream cheese softened so that it mixes in well. Also when you add your eggs in, add them in one at a time until each egg is incorporated.

Good luck, and don't worry if the ingredients didn't go in right. It will probably turn out fine with worse case, the top cracks, and you can put a topping to cover that if it does.
