Snow Storm=Chili Time

We have a few inches of snow on the ground and more coming tomorrow so I decided it's a good night for chili.

How about everyone posts their favorite chili recipe. Tonight I just made a basic ground beef, beans (3 types), onion, tomatoes and spices.

I've seen recipes with everything from chocolate to beer to bourbon....

I'd love to see "your" recipe....not some strangers posted on recipes . com ;)

Maybe add in how you eat it. Some ways we eat it: with crackers, with grilled cheese sandwhiches, with lots of cheddar and eat it with Scoops corn chips, with garlic bread on the side, or DH lilkes it with a spoonful of cooked elbow macaronis.
 
I make chili a lot of different ways. The family favorite is with big chunks of beef and pork and a little ground beef, simmered with tomatoes, green peppers, onions, garlic and 4 colors of beans. I add chili powder, cumin, smoked paprika and black pepper for spice, along with some chipotle peppers in adobo.

It's smoky and spicy and chunky and flat out heaven.
 
I make Mexican chili in the crockpot.

A couple chicken breasts, a can or 2 of creamof chicken/celery, salsa, can of corn, black beans, and a packet of taco seasoning.

top with cheese and sour cream.
also, like to scoop it with corn chips.
 
Here's my recipe:

1 lb ground beef, browned with chopped onion and red pepper
2 or 3 big cans of diced tomatos (depending on how many folks I'm feeding)
1 can Ro-Tel tomatos with green chile
1 small can diced green chile (if I'm making it for my family I add this. For company, I omit it.)
1 can kidney beans
1 can corn

That's it. We sprinkle shredded cheddar cheese on top before serving. Sometimes I serve it in individual bread bowls (dd LOVES it this way.)

What spices do you guys use? I have ground beef thawing in the fridge...I have beans and onions and canned tomotoes...but what spices? Just chili spice?
 
I make this recipe which claims to duplicate Wendy's chili. Our local Wendy's closed, so this is the only way to get that chili, which DH loves! It makes a lot, so I freeze it in single-serving packages.

Wendy’s Chili

Yield: 12 servings
from A Treasury of Top Secret Recipes

2 pounds ground beef
one 29-ounce can tomato sauce
one 29-ounce can kidney beans (with liquid)
one 29-ounce can pinto beans (with liquid)
1 cup diced onion
½ cup diced green chili (2 chilis)
¼ cup diced celery (1 stalk)
3 medium tomatoes, chopped
2 teaspoons cumin powder
3 Tablespoons chili powder
1 ½ teaspoon black pepper
2 teaspoons salt
2 cups water

1. Brown the ground beef in a skillet over medium heat; drain off the fat.
2. Using a fork, crumble the cooked beef into pea-sized pieces.
3. In a large pot, combine the beef plus all the remaining ingredients, and bring to a simmer over low heat. Cook, stirring every 15 minutes, for 2 to 3 hours.

For spicier chili, add ½ teaspoon more black pepper.
For much spicier chili, add 1 teaspoon black pepper and 1 Tablespoon cayenne pepper.
And for a real stomach stinger, add 5 or 6 sliced jalapeno peppers to the pot.

Leftovers can be frozen for several months.
 
I like to make a Southwestern Turkey Chili. Here's my recipe:

Turkey Chili

1 lb. ground turkey (white meat)
2 cans black beans
1 can rotel
2 cans diced tomatoes
1 green pepper
1-2 onions (depending on size)
1 bag frozen mexican corn
chili powder
cumin
cayenne pepper
minced garlic
salt and pepper
dash of cinnamon
(note: I know that the amounts are missing for the spices... I'm a rebel, and I don't really tend to measure when I cook - blame my mom, lol)

Dice pepper and onions. Saute in large pot with a little olive oil, and the minced garlic, until soft. Add ground turkey, salt and pepper, and cook until turkey is browned.
Add remaining ingredients. Spice to taste (we like our chili fairly spicy). Simmer over low heat for 4-6 hours. Taste for spice levels and adjust. Serve with shredded Colby-Jack cheese and sour cream.

I used cumin, fresh ground black pepper, paprika, cayenne, onion powder (and diced onion), garlic powder, oregano and a little bit of sugar. I had a little chili powder left that I had bought in December so I finished that off too.
 
I made chili last night! DD21 pronounced it the best chili she ever had. And it was good. Mine is super easy! I use the Caroll Shelby Chili packet (spices and cayenne), 1-1.5 pounds of diced round steak, a big can of diced tomatoes, 2 cans of pintos. Sometimes I put in more chopped onions and a small can of green chilies. We serve it with cheese, sour cream and fritos.
 
Ha! I just made Turkey chili last weekend.

2 lbs Turkey, chili powder, cayenne pepper, black pepper, stewed tomatoes, diced tomatoes, tomato sauce, onions, a little salt, and after serving it, throw in a few dashes of Tabasco.

My favorite Chili companion is a "baked" potato (cut it in the middle, wrap it in a wet napkin, and microwave the stinker!).
