Smothered Chicken

Have you ever seen a recipe on tv that looked so good you wanted to make it right away? I was watching GMA this morning and the comedian Mo'nique was on making recipes from her new cookbook. She made smothered chicken that looked so good I'm going to make it tonight!! Wish me luck because I've never made smothered chicken, but I just have to try it! I'll let you know how it turns out. :bitelip:

What was it smothered with? Let me know how it comes out, I'm really in the mood for chicken today,too.

I think I'm going with the one pan chicken and dumplings I got from Cook's Illustrated, or the show America's Test Kitchen, I forget which, they are both the same folks though. I've made it before and it's soooooooooo goooooooooood.
 

I was watching 30 min meals with RACHEL RAY last nite and she made some apricot chicken that looked so dern good...I wish my hubby would eat stuff like that so I could make it. :confused3 But he is just so picky!

It's smothered in a gravy that has celery, onion garlic and a few other ingredients. The complete recipe is on abcnews.com/Good Morning America.
She made fresh green beans to go with it. Yep, making those too. :goodvibes I'll let you all know if I like it. Now, I'm off to find Rachel Ray's apricot chicken recipe.
 
And in fact just got home with all the ingredients to make it as well!!! LOL

I very often see something being made on TV that becomes that night's dinner...the power or suggestion I guess!

I make this WONDERFUL chicken recipe called chicken divan...easy and yummy too. In fact, I am headed out to the store to get the rest of what I need to finish it up...

3 or 4 chicken breasts cooked how you would like....for this, I boil mine then cut into cubes

1 bag or brocoli florets

2 can of cream of chicken soup
1 c. mayo
1 squeeze of lemon juice
curry to taste...i use about 1/2 t.

mix above ingredients together to make a sauce

2 cups shredded cheese, I use a cojack

and some rice to serve the chicken over....

cook chicken and cut into bite size pieces

place brocoli florets in a baking dish
cover with chicken pieces
add sauce over the top of the chicken and brocoli
cover with cheese

bake in 350 iver for about 30 minutes...until cheese is melted and slightly brown and bubbly.

Serve over rice and enjoy~~

BamaTigger--I just read on another thread that you are on a diet. You should not be anywhere near a "Smothered Chicken" thread. Shame on you! :teeth:

Don't know Rachel Ray's Apricot chicken, but I used to (before I had a picky kid) mix a jar of Apricot preserves with a package of Lipton's onion soup and put that on chicken before baking. You can also mix i some thousand island dressing (really).

And Lizdotcom99, I use that same recipe but switched the cream of chicken with cream of mushroom soup. Also yummy. Also, you can take a can of cream of mushroom, mix it with sour cream and some cooking sherry. That's pretty yummy, too. (All from my no-worries-be-happy food days. You should hear about the meatloaf I made in those days! :lmao: )
 
Hey guys - the chicken wasn't bad. The smother - i.e., the gravy - wasn't the consistency I wanted it to be. I suck at making gravy! But the flavor was good and DH liked it. The green beans were excellent!
