I put vinaigrette or balsamic as that's what I'd normally order at a restaurant; however, ranch is always tempting because good restaurant ranch is so much better than just about anything that's store bought. Like it's worth the indulgence.
I don't do salad or salad dressings, not at restaurants. The only salad I tend to get is a bit of small side salad on the side of the plate, and these dont come with dressing options!
Blue cheese please! I'm not crazy about any salad, but I eat it because I guess I'm supposed to? I force myself to eat salads at home, I'm not likely to order one at a restaurant. "If I wanted something healthy I'd have stayed home!"
Not on your list, but my parents always said you knew your were at a fancy restaurant if they had Roquefort salad dressing. So that historically been my choice when eating out, but few restaurants have it anymore. I do buy it in the grocery store from time to time as a treat, but it is expensive.... $9.19 for a 16 ounce jar. By comparison, a 16 ounce French dressing is only $2.98. Blue Cheese is $7.39 for 16 ounces.
If I had to pick from your list, Blue Cheese would be my choice.
Ranch or Blue Cheese depending on what I'm eating for dinner. If it's a steak then Blue Cheese because I like dipping my steak in it. Any other meal it's ranch.

Clearly raw eggs should be pasteurized if served in something uncooked. Asking the waitress if the eggs used in their Caesar dressing are pasteurized is a waste of time since she likely doesn't know or would just say 'yes they are'. Bottle dressings sold in the grocery store are shelf stable at room temp until you open them and always use pasteurized ingredients.

My daughter loves Caesar salad dressing, but her issue is with the dressings that have anchovies in them as she does not eat meat. An authentic modern Caesar salad dressing has both raw eggs and anchovies in it.
The people I feel sorry for are those with severe food allergies. Eating in a restaurant can be fatal because seemingly harmless practices can trigger allergic reactions. Just having a food with possible allergic properties near other foods and contaminated them. Things like eggs.
Then there are the unexpected allergies. An employee at my last employer (before I worked there) with no known allergies died of anaphylaxis shock triggered by a combination of eating shrimp while drinking a craft beer with a specific type of yeast in it. He was dead in minutes, before paramedics arrived. The Medical Examiners report took months before coming to that conclusion.
I'm another person that it depends on the type of salad. A good steakhouse salad=blue cheese, BBQ chicken chopped=ranch, fresh greens with berries=vinaigrette, etc.
I LOVE to make my own dressing at home. SOooo much better than the bottle.
