I'm fine with either one - I wouldn't say they're my favorite side dish (my wife's sausage stuffing wins that prize), but it's always a solid staple.

I've made them both ways - usually, when making a smaller amount, like for a nightly dinner, I'll mash the potatoes with a fork (I keep meaning to buy a potato ricer as well as a masher). But for a larger gathering, like tomorrow, I usually will use the hand mixer.
That brings back memories. I haven't had sausage stuffing in years. My mom used to make it, not necessarily for Thanksgiving, but it was a special treat when she did make it for sure. Is her recipe secret or overly difficult? Thanks for the wonderful memory either way. :)
 
Po-TAY-to, Po-TAH-to... what's not to love, especially if there is gravy involved?!!

Hers is pretty simple - sauté onions and celery in a stick of butter, then brown a pound of sausage (sage flavor is our favorite). She'll do that the night before. Then the next morning, warm the mixture up, add a couple beaten eggs, chicken broth and poultry seasoning, then mix in cubed stuffing (we're basic - just the Pepperidge Farms stuff from the grocery store). I usually stuff a bunch of it in the bird and the remainder goes into a dish to bake separately. :thumbsup2

As long as there is garlic and cream in them, and the potatoes are Yukon Gold potatoes, whipped or mashed potatoes are welcome on our Thanksgiving table.
