We seperate laundry. It is just the 2 of us but we have 3 hampers to make it easier. We have multiple loads over the course of a week.
1. Whites warm water ( socks, underwear, towels)
2. Darks warm water( same as above)
3. Pants ( usually jeans now we are both retired) and/or Shorts (in Summer )
4. Sheets
5. Light color tops / shirts
6. Dark tops / shirts
Most of our clothing goes on drying racks or hanger bar in a spare bedroom to dry after a short run in the dryer
 
I’m a laundry fanatic. Like is washed with like, no matter how many mini loads it takes. Tattle tale grey is unknown in our house. 😂🤣
 
I definitely separate.

Whites (gets bleach)
Light colors
Darks
Blacks
Reds
Jeans (I don't want them abrading against more delicate fabrics.)
Towels
Bedding
 

I separate red, blues and lights, usually. Black, purple, gray, etc. tend to go with reds because those loads are smaller. I do all my laundry at once because I have to take it to a laundromat, so I'll do three loads at once. Sometimes 4, if I want to do underwear separately.
 
DH does his laundry, I do mine. We have light dries and heavy dries, and usually do the heavy dries together as it's mostly jeans and sweats and we want to do a full load. We wash in cold water and use Color Catchers and have never had a problem (but most of our clothes are old/everyday type stuff). Dirty towels and sheets get thrown in the bottom of the laundry room closet until there is a full load (or two, or three, or... we have a pile of towels and bedding, so we're not always good about keeping up with that stuff). Let me add that we use towels repeatedly and make sure to hang them to dry between uses, so we really only have 2 towels a week, and I don't use a wash cloth and DH hangs his to dry, so not a lot of towel laundry at all.
 
With only two of us, I barely have a full load every two weeks. Typically, I separate into towels/sheets, whites, darks, colors. I like smaller loads as I'm more likely to actually fold them and put them away immediately rather than leaving them in the dryer for a week, lol.
 
I usually do 2-3 piles. I kind of separate them in different ways... either light and dark, or clothes vs socks, towels (stuff that wont wrinkle in the dryer)
