Due to my family's summer schedule, we will be hitting WDW week of July 4th (as is the case most years). We've been during that time before, but planned well enough, that we did OK.

Now that I'm reading that EMH make that particular park extremely crowded even at non-peak times, would I be better off going to the other parks on EMH day? We've chosen not to add Park Hopping to our tickets. All of my family is late teen or older, so we plan to hit the thrill rides mainly, regardless of time of day.

Is it correct to assume that morning EMH hours are less crowded that evening EMH hours?

Yes, I can get more done in the first hour (or even 2 to 3 hours) after opening (EMH days included) than any other time the rest of the day.

Regardless of what's "normally" supposed to happen, it is ALWAYS a GUESS as to whether a given park WILL or WON'T be the "most crowded" and if you don't buy "hopper" options, that leaves you no choice but to either STAY at that park or take a break and come back later in the evening (to the same park, which is OK with single-park tickets) as things wind down a bit.
