Sit-Down Dinner Vouchers?

It doesn't look like any of these vouchers would cover dinner at a sit-down restuarant. Is this correct?

Are there set hours that the Vacation Kingdom lunch vouchers can be used?

Yes, that is correct. However, the Q&C vouchers can be used at Beaches and Cream. That is technically a counter service restaurant, but there are a small number of tables and waiters/waitresses do take and bring your order to you. IMHO, it is more like a counter service place than a full service, sit-down restaurant, though.

The Vacation Kingdom Lunch Vouchers can be used anytime during the participating restaurant's lunch hours. Hours vary by restaurant. You will need to call WDW Dining to get the lunch hours for a specific restaurant.

You get tons of food--more than you can possibly eat and you can even get the GIANT "KITCHEN SINK" of every flavor icecream and every topping with your coupon. a great deal!!!!! and we always sat down and were waited on by great cast members with great attitudes--you can't lose!

Also, the more expensive one is good at Cinderella's Castle for lunch which also was a great deal--i was able to get crab cake appetizer, prime rib and a wonderful dessert, ice tea, etc--a very good deal!
