Sister's Vacation! Thoughts??

I am taking my DS to Disney. Her first "real" trip. She went a few years ago to march in the parade with our high school band and spent a few hours tops in the parks. We are both in our 20s. She just turned 21. I am trying to make this a fun girls week. Here is what I have after adjustments after reading some comments on the board. I am driving myself nuts changing our ADRs but very surprised that I still found some decent times for Le Cellieur and Narcoossee's last night. We are on the DxDDP and staying at Pop.

Wed April 27th-Travel day as we are driving

Thurs April 28th-Arrive at Disney around 1 or 2PM. Unpack and head to the boardwalk to explore. 5 PM dinner at Cape May Cafe (sis loves crab legs). Then head to MK (EMH til 2AM). Wishes dessert party at 9PM.

Fri April 29th-Epcot (EMH til 12 PM). Akershus (B), Le Chefs de France (L) (my fave), Teppan Edo (D) as sis loves hibachi.

Sat April 30th- Breakfast at Kona and then off to the Wizarding World of Harry Potter (IOA closes at 5 PM), Narcoossee's for a late dinner (dressing up this night!) and then maybe Jelly Rolls or the dance hall on the boardwalk.

Sun May 1st-MK (another 2AM day), Crystal Palace (B), The Plaza or CS (L), Tony's (D). Parade this night since we will miss with Wishes on Thurs.

Mon May 2nd- HS (EMH til 10). 1900 Park Fare (B), Mama Melrose (L), Sci Fi (D). Wish lunch and dinner could be switched but no ADRs.

Tues May 3rd -AK. Tusker House (B), Yak and Yeti (L), Wolfgang Puck Cafe (D) then explore DTD.

Wed May 4th-Ohana's (B), then probably MK or Epcot. Very late lunch/early dinner at Via Napoli and then we will hit the road.

Thurs May 5th-Travel day back home.

Most of our meals are 6 hours apart. We are doing semi-early breakfasts (between 8 and 10 depending on how late we plan the night before) Lunches are around 2 or 3 and dinners 8 or 9. I've done the DxDDP before (loved it) and prefer TS and we always eat three meals a day. So it's the best use of the credits and allows us to cool off and sit for awhile. My thought is that since (other than breakfast), our meal times aren't the normal times that we may be riding while others are eating. I also thought with two adults we probably can move through the parks quicker then when I've gone before with kids in our group. We also aren't going to be disappointed if we don't do every ride or show. We have about 6 must do rides at every park plus The Lion King show and Beauty and the Beast. Other than that, we don't care.

So what do you think? Should I stop picking at it and worrying over our trip? If your sis planned this for you, would you be happy with it?
 
Still driving myself nuts from planning! I think I analyze too much. Think I'm OK with what I have? Any other things out there I should consider?
