If your kids are accustomed to eating in better restaurants, and able to sit through a multi-course meal without complaint, then that will work. But, I would base this on prior experience---if you've never taken them on a Big Night Out before, this isn't going to be the time to try it. A morning/day in a theme park is taxing in a way that the average day can't match.but are hesitant because, A, we will have a three-year-old and a 12-year-old with us, and, B, are a little worried about the dress code as we would probably go right after a park if we decide to do this.
As for the dress code: when I go to a Signature restaurant at WDW, I prefer to go back to my room from my day's activities before going out. I grab a quick shower and change into fresh clothes more appropriate to an evening out than a day in the parks. This doesn't take a whole lot of time, but it helps me be more "in the moment" during the evening. I don't much worry about what others do or don't wear; this is just about how my partner and I feel.
