DO they have 2 show times at night. If you do an early seating there is a later show, but is there an earlier show for the later dinner seating? thanks

Yes, There are two show times. You will get to see all the shows no matter which dining time you have. They are fantastic shows.

Is there a methodology to when they do matinee performances? I've heard of them doing them, but, don't know if it's only if you are at sea that particular day....
 
Evening shows are at 6:30 and 8:30. You go to the one that differs from your dinner time. Matinees are sea days of the more popular and child oriented shows. They are in the navigator--other than that, I'm not aware of any logic as to when they occur. Island Magic used to be the day before Castaway, but that has changed on our recent cruises.
 

If you have Main Seating (aka Early Seating) your dinner start at 6pm and your show will start at 8:30

If you have Second Seating (aka Late Seating) your dinner will start at 8:30 BUT your show will start at 6:30 (yes, before dinner)

NOTE:
With early seating your show will be AFTER dinner
With late seating your show is BEFORE dinner

For experienced cruises, this is important to note. Other cruise lines do the shows AFTER DINNER no matter what seating you have.

GOLDEN MICKEYS did have a 3rd show, at 10:30 pm. That was awesome.
You could go to your "assigned" show, or the late show, or both. We were on the Eastern, and on the sea day before Castaway Cay, that show had a 2 pm early showing.
We had late seating and really didn't like having to get ready early for a 6:30 pm show (we selected Late Seating so we could mooch around the ship until 7:30, not knowing Disney did the shows BEFORE late dinner)

Disney cruises are awesome....but the "atmosphere" and characters are not the only differences. Disney runs their ships differently in that there are more earlier events, and fewer late night events than other cruise lines. Disney is an early to bed, early to rise cruise line.
