Got the PC and printer-scanner hooked up tonight so after I pick-up photos I can start snanning them.
Js Temptation recipe(small family amount -double for bigger families like mine)
7 medium boiling potatoes, peeled and cut into fast food french fry size(put in cold water after cutting them)
4 1/2 Tablespoons butter
2 Tablespoons vegetable oil
2 to 3 large yellow onions, thinly sliced (4 cups)
White pepper
2 Tablespoons fine dry breadcrumbs2 Tablespoons butter, cut into 1/4 inch bits
1 cup light cream
1/2 cup milk
Flour
16 flat anchovy fillets or 2 Tins of Abba anchovy fillets (Swedish anchovys) or other salty fish
preheat oven to 400 degrees
In a frying pan heat 2TB of butter, oil and onions. Cook onions till soft and transparant (Do not brown)
use 1/2 Tb Butter grease a 2 quart cassarol dish
drain and dry potatoes then layer a single layer in bottom of cassarol dish.
Next a layer of onion, a layer of fish, repeat till last layer is potatoes
mix flour with the white pepper and shake it as evenly as you can over the last layer.
cut the 2 Tb of Butter into small pieces add the breadcrumbs to the butter in a plastic bag, shake the sealed bag till all the butter is covered in breadcrumbs.Cover the potatoe layer with breadcrum mix.
reuse your onion pan to heat milk and cream till it is just starting to simmer.
pour the hot milk mix over the potatoes.
Bake about 40 to 55 mins. It is done when potatoes are fork tender and most od the milk is gone.
