I made all my dining reservations back at the 180 day mark, but I didn't have a hotel reservation yet. I remember them asking about if I had one, and now that I do have my hotel with the free dining package, do I need to call the dining number and link my hotel reservation/package to it?

As long as you used the same phone number on your dining ressies that you used for your room package, you shouldn't have to call back.

You don't need to call. Dining reservations never need to be linked to a hotel reservation; people who stay offsite have them, people who live in the Orlando area have them. It won't affect your stay or your reservations in any way if you leave them linked to your phone number.

I don't know why they ask for a reservation number, probably just for their internal tracking purposes.

It wouldn't matter if you didn't use the same phone# (like PP said, they don't need to be linked), but if you did use your same #, when you check into your resort they will be able to print out all your dining ressies for you.
