We are going in August and looking for some good shoes for our park days. I am thinking open toe sandals due to the heat and bad bunions.

Any suggestions would be great.

No exact suggestions just make sure they either dry quickly or you take two pairs We got soaked almost every afternoon and rotated through shoes on or last August trip. No way to avoid getting your feet wet, we were up the ankles in puddles at times from the downpours. Crocs would dry fast I think? I just don't like the way they feel on my feet. Not sure why.

Croc sandals or flip flops.
No runners as too hot plus they get soaked when it rains.

Love my Chaco sandals and Tevas also very good. Both have good aggressive treads that make walking on slick pavement, cement and cobblestones safe. Chaco are very $ but I sometimes find sales online. I have the 'regular' strap system ones and not the toe stranglers that loop around the big toe. No need to complicate the situation and cause more issues. Teva Hurricane and Terra-Fi are also very good but I prefer Chaco because they have a solid arch support and I can dial in the width of the sandal by adjusting the strap. I always bring one pair of athletic sandals like Chacos or Tevas plus wear my runners on the plane. In the past, I loved my Montrail trail runners but that company was purchased by Columbia and the shoe design isn't the same now. I'm breaking in a pair of New Balance Fresh Foam running shoes and hope those will replace my Montrails. I pair them with Injinji toe socks and it really helps reduce blisters. Injinji also wildly $ but I sometimes find an OK price on amazon if I don't care about colour. I take 3 prs and hand wash in the sink every other night. They dry overnight. Whatever you choose, def break them in months in advance of your trip so no painful surprises at WDW.

I swear by my Tevas. Bring two pair and alternate. They've come in various colors over the years. I have Brown and Black.
